This easy 3-ingredient Snickerdoodle Apple Cobbler uses refrigerated cookie dough and apple pie filling for a delicious twist on an American classic, ready in under an hour!

Apple cobbler is one of my favorite desserts, especially when it’s time for fall baking. This year, I decided to not only give apple cobbler a snickerdoodle twist, I also made what is quite possible one of my easiest recipes yet!

With just 4 simple ingredients, you can have this snickerdoodle apple cobbler ready to go in under an hour.

Snickerdoodle cookies + apple pie = amazing easy snickerdoodle apple cobbler!  (Apple pie math – it’s a thing!)

Ingredients

  • sugar cookie dough
  • apple pie filling
  • cinnamon
  • sugar

Step by step

  1. Preheat the oven and spray a baking dish with nonstick cooking spray.
  2. Press the premade dough into the bottom of a baking dish.
  3. Sprinkle the cookie base with cinnamon sugar sprinkled on top.
  4. Top the cookie crust with apple pie filling (store-bought or homemade).
  5. Add the remaining sugar cookie bits and cinnamon sugar to the top of the apple pie filling.
  6. Bake for 35 minute or until hot and bubbly.  

Serving suggestions

I recommend serving the cobbler warm, topped with vanilla ice cream for an a la mode treat! You could also try whipped cream or drizzle caramel sauce over the top, you really can’t go wrong!

Storage

Store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave.

Description

This easy 3 ingredient Snickerdoodle Apple Cobbler uses refrigerated cookie dough and apple pie filling for a delicious twist on an American classic, ready in under an hour!


Ingredients

Scale
  • 1/4 cup granulated sugar
  • 4 teaspoons ground cinnamon
  • 16.5 oz tube of Pillsbury refrigerated sugar cookie dough
  • 20 oz. can of apple pie filling

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mix cinnamon and sugar in a small bowl, set aside.
  3. Press 2/3 of the cookie dough into the bottom of an 8×8 or 9×9 baking pan.
  4. Sprinkle with 2/3 of the cinnamon sugar.
  5. Spread the apple pie filling over the cookie base.
  6. Break the remaining cookie dough into small 1/2″-1″ pieces and flatten slightly, then place over the pie filling. The pie filling will not be covered completely.
  7. Sprinkle the top of the cobbler with the remaining cinnamon sugar mixture.
  8. Bake in a 350 oven 35-40 minutes or until the top is golden brown and set.

Serve warm topped with ice cream, caramel sauce, or whipped cream if desired

    1. Hi Stella – I stored them in an airtight container and did not refrigerate them, but they were only around for 2 days at our house. Any longer than a few days and I would probably pop them in the fridge. Hope you have a happy 4th!

  25. I’m looking forward to making these this week however my grocery store didn’t have any refrigerated sugar cookie dough so I was planning to make my own dough and continue on with the recipe. Do you think this will be a problem?

    1. Hi Sarah! I bet your homemade dough would work perfectly and my only recommendation would be to chill the dough prior to baking! I’d love to hear if it works out!

  26. Mine turned out runny. The tops were really crispy, so I pulled them out, but the cookie didn’t seem to really cook. Some of it did if it was on the edge. It was still good, and we needed seconds, but I don’t know what to do to fix it. Ideas?

    1. Hi Kari – Bummer!! Maybe the oven temperature was a little off? Or different types of baking dishes (glass, dark, stoneware) could cause something to bake slower or faster. I hope you try these again – they are one of our very favorite easy desserts 🙂

It takes about 50 minutes to an hour. I will be serving it with vanilla ice cream to my co workers this evening, I’m sure it will be a hit….again!

  29. These look absolutely delicious. Do you all think they would freeze well before baking? I live to do freezer meals with 2 of my friends and they were wanting desserts next go around. Thus, would be a quick and easy one to do and freeze.
