    This easy 3 ingredient Snickerdoodle Apple Cobbler uses refrigerated cookie dough and apple pie filling for a delicious twist on an American classic, ready in under an hour!

    Apple cobbler is one of my favorite desserts, especially when it's time for fall baking. This year, I decided to not only give Apple Cobbler a snickerdoodle twist, I also made what is quite possible one of my easiest recipes yet!

    With just 4 ingredients and less than an hour, you can have this Snickerdoodle Apple Cobbler ready to go!

    Ingredients

    • sugar cookie dough
    • apple pie filling
    • cinnamon
    • sugar

    Step by step

    This cobbler starts with a sugar cookie base made by pressing the premade dough into the bottom of the dish. The base gets a healthy dose of cinnamon sugar sprinkled on top. Then, that cookie base is topped with rich, cinnamon-y apple pie filling (store bought or homemade).

    Finally, another layer of sugar cookie bits and cinnamon sugar top the pie filling and the whole thing is baked until hot and bubbly.  Snickerdoodle cookies + apple pie = amazing easy Snickerdoodle Apple Cobbler!  (Apple pie math - it's a thing!)

    Serving suggestions

    This cobbler is the best of both worlds ... apple pie and cookies!  I recommend serving it warm topped it with vanilla ice cream for an a la mode treat! You could also try whipped cream, you really can't go wrong!

    Can I use homemade apple pie filling?

    You can make this with your own homemade apple pie filling if desired.

    How do I store leftovers?

    Store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave.

    Description

    This easy 3 ingredient Snickerdoodle Apple Cobbler uses refrigerated cookie dough and apple pie filling for a delicious twist on an American classic, ready in under an hour!


    Ingredients

    Scale
    • ¼ cup granulated sugar
    • 4 teaspoons ground cinnamon
    • 16.5 oz tube of Pillsbury refrigerated sugar cookie dough
    • 20 oz. can of apple pie filling

    Instructions

    1. Preheat oven to 350 degrees Fahrenheit.
    2. Mix cinnamon and sugar in a small bowl, set aside.
    3. Press ⅔ of the cookie dough into the bottom of an 8x8 or 9x9 baking pan.
    4. Sprinkle with ⅔ of the cinnamon sugar.
    5. Spread the apple pie filling over the cookie base.
    6. Break the remaining cookie dough into small ½"-1" pieces and flatten slightly, then place over the pie filling. The pie filling will not be covered completely.
    7. Sprinkle the top of the cobbler with the remaining cinnamon sugar mixture.
    8. Bake in a 350 oven 35-40 minutes or until the top is golden brown and set.

    Notes

    Serve warm topped with ice cream or whipped cream if desired

      This sounds amazing! How long do they last and how do you store them? Thinking of trying it for 4th of July, if I travel with them, do I need a cooker? Thanks!!

        Hi Stella - I stored them in an airtight container and did not refrigerate them, but they were only around for 2 days at our house. Any longer than a few days and I would probably pop them in the fridge. Hope you have a happy 4th!

      Everyone at my house loves apple pie & snickerdoodle cookies. I made them a couple of weeks ago & they lasted about 2 days. Today I made a 9 x 13 pan by doubling the recipe. They are delicious!!

      I'm looking forward to making these this week however my grocery store didn't have any refrigerated sugar cookie dough so I was planning to make my own dough and continue on with the recipe. Do you think this will be a problem?

      Mine turned out runny. The tops were really crispy, so I pulled them out, but the cookie didn't seem to really cook. Some of it did if it was on the edge. It was still good, and we needed seconds, but I don't know what to do to fix it. Ideas?

        Hi Kari - Bummer!! Maybe the oven temperature was a little off? Or different types of baking dishes (glass, dark, stoneware) could cause something to bake slower or faster. I hope you try these again - they are one of our very favorite easy desserts 🙂

      Making this again...this time I'm trying peach! This is the 3rd time I have made this this Summer! The last time (and this time) I doubled it and put it in a 13x9 pan. It takes about 50 minutes to an hour. I will be serving it with vanilla ice cream to my co workers this evening, I'm sure it will be a hit....again!

      These look absolutely delicious. Do you all think they would freeze well before baking? I live to do freezer meals with 2 of my friends and they were wanting desserts next go around. Thus, would be a quick and easy one to do and freeze.

      I made this last night and it was a great success! I did use my own sugar cookie dough and apple pie filling. It was a bit soft, but I like soft baked cookies anyway. Thanks for the recipe. Who doesn't love apple pie and snickerdoodles?

      These are in the oven now! Hope I didn't goof up. Used the same amounts but put it in a 9x13 so we will see. I also drizzled some caramel sauce between the cookie crust and apple filling, crossing my fingers! Thanks for the recipe.

      I made these for the first time , I was amazed at how very simple and delicious they were ! I doubled the recipe and made in a 13x9 pan also drizzled with some powder sugar glaze. They ate it up !! Thank you for the recipe ! 🙂
