My family loves chicken cordon bleu casserole, and it is way easier to make than traditional chicken cordon bleu. There is so much flavor in this casserole that it can be served on its own, but I like to add in a side dish or two to stretch the meal farther (and hopefully end up with leftovers for the next day!)
Here are my favorite side dishes for this family-friendly casserole.
1. Green beans
Steamed, roasted or sautéed green beans with a drizzle of olive oil and a sprinkle of salt and pepper make a delicious and healthy side dish that is fast and easy to prepare while your casserole bakes.
2. Mashed potatoes
Creamy and buttery mashed potatoes are a classic side dish that goes well with almost any savory dish, including chicken cordon bleu casserole. Garlic cheesy mashed potatoes are a great way to use up any leftover Swiss cheese you may have from the cordon bleu recipe.
3. Roasted vegetables
