While I am no stranger to the frozen foods section of my grocery store and I really appreciate the convenience of prepared items, there is just something about homemade cheesy garlic bread or garlic knots that makes a basic pasta dinner taste pretty special.

Since my boys love pesto sauce, I stirred in a little jarred pesto and added a generous amount of cheese to the buttery spread before slathering it on slices of a fresh loaf of bread. The resulting cheesy pesto garlic bread was officially proclaimed to be the hero of dinner!

Ingredients

  • loaf of Italian bread
  • butter
  • garlic
  • basil pesto (you can try our nut-free pesto recipe if you can’t have pine nuts)
  • parmesan cheese

I love using 9×13 sheet pans (also called quarter sheet pans) for baking. Two pans fit on my oven shelves and I can easily rotate them for even baking. Plus, they are smaller to store and a great tool for smaller kitchens.

Step by step

  1. Slice bread into 3/4-inch slices and place it on a baking sheet while the oven is preheating.
  2. Stir together the softened butter, pesto, garlic, and cheeses.
  3. Slater each slice with a generous amount of the garlic butter spread.

  1. Pop it in the oven until golden and bubbly … your kitchen will smell amazing at this point 🙂

Variations

You can play with the cheese in this recipe, try mozzarella cheese or substitute the parmesan out for romano or even asiago.

Substitute the basil pesto with pesto made from sun-dried tomatoes or other herb pestos.

Serving suggestions

This is a great side dish for almost any recipe but I especially love it with Italian dishes like Tuscan chicken pasta, copycat chicken gnocchi soup, or five cheese ziti. I also like to serve it with a homemade Caesar salad with sourdough croutons on the side as well.

Storage

Store leftover garlic bread in an airtight container or storage bag in the refrigerator for up to 3 days. As with any leftover baked bread item, reheat in the oven for a crispier texture.

Description

Ingredients

Scale
  • 10 slices Italian bread (about 3/4″ – 1″ thick)
  • 1 stick unsalted butter (softened)
  • 2 T pesto
  • 2 T minced garlic
  • 2 T grated Parmesan cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Preheat oven to 375 degrees F.
  2. Arrange bread slices on baking sheet(s).
  3. In a bowl, stir together softened butter, pesto, minced garlic and both Parmesan cheeses.
  4. Spread a generous layer of the butter spread on each slice of bread.
  5. Bake for 10-12 minutes or until the bread is toasted, the edges are brown and the butter and cheese is melted.
  6. Broil for 1-2 minutes (watch the bread closely so it doesn’t burn) until the butter and cheese is bubbly and ever so slightly browned.
