I’ve always been a fan of potatoes, but crispy potatoes perfectly roasted in the oven are my favorite. They are so easy to make and always turn out crispy on the outside with a soft, fluffy interior, making them the perfect side for any meal, I can’t wait for you to try them too!
Why I love this recipe
I love this recipe because it’s incredibly easy to make, requiring just 3 ingredients. The crispy edges combined with the soft, fluffy centers are my favorite part, creating the perfect balance. It pairs so well with almost any main dish, making it a versatile side.
I also love how I can change up the flavor with different seasonings to keep things interesting. And since it’s ready in less than an hour, it’s the perfect choice for those busy weeknights when you are short on time.
Ingredients
- baby potatoes, I use Gemstone but you can choose your favorite baby potatoes or chop larger potatoes into smaller pieces
- olive oil
- salt & pepper
- optional extra seasonings (options listed below)
Step by step
- Set the oven: Preheat your oven to 400°F.
- Prepare the baking sheet: Spray a large baking sheet with non-stick cooking spray.
- Prep the potatoes: Wash your potatoes and cut them into bite-sized pieces.


- Toss with oil: Coat the potatoes in olive oil, then spread them out in a single layer on the baking sheet.
- Season the potatoes: Sprinkle generously with salt and pepper, and add any other seasonings you like.
- Roast: Spread the potatoes in a single layer on a baking sheet. Bake for about 40 minutes, or until the potatoes are crispy and golden brown.

Tips for Best Results
- Coat the potatoes well with olive oil: This helps create that crispy, golden skin while giving the salt and pepper something to cling to.
- Maximize surface area: Cut the potatoes lengthwise to get more surface area touching the pan. The more surface area, the crispier the potatoes!

Variations
While I love the simplicity of salt and pepper, you can easily switch things up by adding your favorite seasonings. Some great options include:
- Montreal steak seasoning: Perfect for a savory twist, especially if you’re serving with grilled meats.
- Lemon pepper seasoning: This pairs wonderfully with baked chicken or fish for a fresh, zesty flavor.
- Italian seasoning: Add this for a herby flavor that complements steak or roasted veggies.
- Dill & onion powder: These work great if you want to add some zip to a salad or fresh veggies.
- Paprika: For a mild smoky flavor, paprika is fantastic—especially with breakfast items like scrambled eggs or bacon.
Try garnishing your roast potatoes with chopped fresh herbs like parsley, rosemary, or oregano.

Serving suggestion
These potatoes go with just about anything! They are the perfect side for London broil, bacon wrapped pork tenderloin, or even a simple waldo burger.
At brunch, I love serving them with eggs and bacon for a delicious morning start. (Try our sheet pan eggs if serving a crowd, they are just as easy as these potatoes to make for a lot of people at once.)
Storage
Store any leftover potatoes in an airtight container in the fridge for up to 3 days.
Reheat in the oven for a few minutes to get them crispy again. The microwave is best avoided as it makes them soggy, and we want to keep that crispy goodness intact!

Ingredients
- 1 1/2 lbs. Gemstone mixed baby potatoes, or 1 1/2 lbs. of your favorite potatoes
- 1 – 2 tablespoons olive oil
- salt & pepper, to taste
- additional spices as desired
Instructions
- Preheat the oven to 400°F. Spray a large baking sheet with non-stick cooking spray, set aside.
- Wash the potatoes and cut them into bite-sized pieces.
- Coat the potatoes in olive oil. Sprinkle generously with salt and pepper, and add any other seasonings you like.
- Spread potatoes in a single layer on the prepared baking sheet.
- Bake in the oven for about 40 minutes or until crispy and golden brown.
Notes
- I like to cut potatoes lengthwise to allow for more surface area touching the pan because that means more crispy, golden brown color, and texture!
