Classic Crispy Roasted Potatoes

Description

With their crispy skin and velvety insides, my classic Crispy Roasted Potatoes make the perfect, easy side dish for steak, chicken, burgers, or even a fresh salad!


Ingredients

Scale
  • 1 1/2 lbs. Gemstone mixed baby potatoes, or 1 1/2 lbs. of your favorite potatoes
  • 1 – 2 tablespoons olive oil
  • salt & pepper, to taste
  • additional spices as desired


Instructions

  1. Preheat the oven to 400°F. Spray a large baking sheet with non-stick cooking spray, set aside.
  2. Wash the potatoes and cut them into bite-sized pieces.
  3. Coat the potatoes in olive oil. Sprinkle generously with salt and pepper, and add any other seasonings you like.
  4. Spread potatoes in a single layer on the prepared baking sheet.
  5. Bake in the oven for about 40 minutes or until crispy and golden brown.

Notes

  • I like to cut potatoes lengthwise to allow for more surface area touching the pan because that means more crispy, golden brown color, and texture!
