Ingredients

This recipe uses simple, easy-to-find ingredients for golden, crispy, and cheesy potato bites:

potato bites ingredients in bowls on counter
  • Mashed potatoes – use cold mashed potatoes for easier shaping
  • Parmesan cheese – grated for maximum cheesy flavor
  • Garlic – minced for that savory kick
  • Egg – helps bind the mixture
  • Chives or green onion (optional) – adds a fresh, mild onion flavor
  • Seasonings – salt, black pepper, Italian seasoning, garlic powders, paprika
  • All-purpose flour – the first layer for a crisp exterior
  • Eggs – beaten, to help the breadcrumbs stick
  • Panko breadcrumbs – for extra crunch
  • Vegetable or canola oil – enough for shallow frying

Step by step

  1. Make the potato mixture:
In a large bowl, combine mashed potatoes, Parmesan, minced garlic, egg, chives, salt, and pepper until smooth.
  2. Scoop out about 1 tablespoon of the mixture and roll into balls. Place on a lined tray or plate.
  3. Prepare the coating stations – Bowl 1: All-purpose flour, Bowl 2: Beaten eggs, Bowl 3: Panko breadcrumbs mixed with Italian seasoning, garlic powder, paprika, salt, and pepper
  1. Coat the bites:
Roll each potato ball in flour, dip in egg, and coat thoroughly with the breadcrumb mixture.
  2. Heat 2 inches of oil in a heavy pan to 350°F. Fry in small batches for 3–4 minutes or until golden and crispy. Remove and drain on paper towels.
  3. Enjoy hot with your favorite dip like marinara, truffle aioli, sour cream, or chipotle ranch.

Tips for Best Results

  • Use cold mashed potatoes to help the bites hold their shape.
  • Don’t overcrowd the pan while frying—cook in small batches for even crispiness.
  • Drain on paper towels to remove excess oil.
  • Make sure the oil is at the right temperature; too hot will burn, too cool will make them greasy.
  • Serve immediately for the crispiest texture.

Variation

You can switch up the flavor by adding cooked bacon bits, shredded cheddar, or finely chopped herbs like parsley or rosemary. For a spicier version, sprinkle in some crushed red pepper flakes or swap the paprika with smoked chipotle.
