Garlic Parmesan Potato Bites

Description

Golden and crispy on the outside, soft and cheesy on the inside, these Garlic Parmesan Potato Bites are loaded with flavor and perfect for any snack or appetizer.


Ingredients

Potato Mixture:

  • 2 cups cold mashed potatoes
  • ½ cup grated Parmesan cheese 
  • 2 cloves garlic
  • 1 large egg
  • 2 tablespoons chopped chives
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

For Coating:

  • ½ cup all-purpose flour
  • 2 large eggs
  • 1½ cups panko breadcrumbs
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  •  ¼ teaspoon salt
  •  ¼ teaspoon black pepper

For Frying:

  • Vegetable or canola oil for frying


Instructions

  1. Make the potato mixture:
In a large bowl, combine mashed potatoes, Parmesan, minced garlic, egg, chives, salt, and pepper until smooth.
  2. Scoop out about 1 tablespoon of the mixture and roll into balls. Place on a lined tray or plate.
  3. Prepare the 3 bowls for the coating stations: One bowl with all-purpose flour, one bowl with beaten eggs, and a third bowl with panko breadcrumbs mixed with Italian seasoning, garlic powder, paprika, salt, and pepper.
  4. Roll each potato ball in flour, dip in egg, and coat thoroughly with the breadcrumb mixture. Set aside.
  5. Heat 2 inches of oil in a heavy pan to 350°F. Fry in small batches for 3–4 minutes or until golden and crispy. Remove and drain on paper towels.
  6. Enjoy hot with your favorite dip like marinara, garlic aioli, or ranch.
