It’s no secret that taco Tuesday is a favorite around here, but really our obsession is with any Mexican-inspired recipe, especially when they are as easy and delicious as this super fast Enchilada Dip!

Why I love this recipe
I’m an appetizer girl, I’d rather enjoy a big spread of finger foods most any day than a fancy-pants dinner. That’s why this enchilada dip is one of my favorites!
This dip literally takes less than 15 minutes to prep, you can even serve it right in the skillet if you want! It’s zesty with just the right amount of flavor and trust me when I tell you that it’s one of the first snacks to go whenever I serve it.
Ingredients
Nothing fancy here, you. may even have everything already on hand!

- ground beef – lower fat is better, I used 90% lean
- yellow onion
- spices – cumin and garlic powder
- red enchilada sauce
- sour cream
- shredded Mexican cheese
Step by step (with video)
- Brown meat in a medium skillet over medium-high heat, breaking the meat apart as it cooks. Drain excess grease if necessary. (See note below.)
- Add onions and cook 3-4 minutes, stirring often, until the onions soften.
- Add cumin and garlic powder, then enchilada sauce. Cook an additional 3-4 minutes.
- Remove from heat and stir in sour cream.
- Transfer to a serving dish if desired and top immediately with cheese. Allow the cheese to melt for a few minutes before serving.
If you only have a tiny bit of excess grease, use paper towels and a pair of tongs to blot it out rather than draining the entire skillet for easy cleanup!

Serving suggestions
I usually serve this dip with tortilla chips of course but you can try it with any of your favorite dippers: crusty bread, pretzels, potato chips, etc. You can also use it to fill burritos or tacos for a bit of a non-traditional taco night!

Storage
Store any leftover enchilada dip in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave, stirring as needed.
