I love shrimp. Like love-love them. They are seriously one of my favorite foods. Cold in shrimp cocktails, skewered on the grill, or baked on top of crispy tortilla chips like the ones in this amazing Shrimp Nachos recipe.

These shrimp nachos start with crispy tortilla chips that are topped with a mixture of shrimp in a spicy cheesy sauce. They’re then baked until crispy melty flavor packed perfection! It’s the perfect dish for busy weeknights or as a game day appetizer.
Ingredients
- nacho chips
- pre-cooked fresh shrimp (or thawed frozen shrimp)
- Mexican cheese
- mayonnaise
- chipotle peppers in adobo sauce
- onion
- ground cumin
- cilantro
- black pepper
- green onion
Step by step
This recipe is so easy! While your oven in preheating, line a baking sheet with aluminum foil or parchment paper then a place a single layer of tortilla chips on the pan.
Pro Tip: I like to use the Tostitos Scoops tortilla chips because they are strong enough not to break under all those toppings!
Next, mix up your shrimp with the cheese, mayo, peppers, onions, and spices in a large bowl and spoon the shrimp mixture over the tortilla chips.
Bake the nachos for 3 minutes, then broil an additional 3 minutes. That’s it! So easy!
Needless to say, there were no leftovers and these shrimp nachos got two big thumbs up from my family!

Description

Ingredients

10 ounce bag tortilla chips (Scoops are easiest to eat)

2 cups Mexican Cheese
-
1.5 lb peeled and deveined COOKED shrimp, tails removed and chopped into bite sized pieces

1 cup mayonnaise
-
4 chipotle peppers in adobo sauce, chopped
-
½ white onion, minced
-
2 teaspoons ground cumin
-
½ cup chopped fresh cilantro
-
¼ teaspoon black pepper
-
green onion for garnish
Instructions

Preheat oven to 400 degrees. Line a baking sheet with foil.

Spread tortilla chips onto the lined baking sheet

Mix shrimp, cheese, mayo, peppers, onion, cumin, cilantro and pepper in a bowl and stir to blend.

Spoon shrimp mixture over the tortilla chips evenly.

Bake for 3 minutes, then turn on the broiler and broil until cheese is golden and bubble, about 3 minutes. Serve garnished with green onion if desired
Notes
- Tostitos Scoops tortilla chips are less likely to break under the weight of the toppings than traditional chips, but choose your favorite!

Dear “Ambassadress”, I love shrimp nachos. I am a Georgia girl, but when our family hits the Florida beaches we also hit the fresh seafood. The Florida Pinks are great, but our all time favorite is the Royal Red shrimp. I will be checking out the Grouper recipe too. Thanks for the yummy recipe.

Why is it called shrimp nachos with creamy garlic sauce, when there is no garlic in the ingredients? Was it missed?
I’ve updated the recipe and didn’t realize garlic was still in the title, the original is below:
For the sauteed Shrimp
1/2 pound fresh shrimp (peeled and deveined)
1 clove minced garlic
2 tablespoons olive oil
Squeeze of lemon juice
Salt & pepper to taste
For the nachos
Tortilla chips
2/3 cup shredded monterey jack cheese
1/4 cup shredded Parmesan cheese
For the creamy garlic cheese sauce
1/4 cup shredded Parmesan cheese
1/3 cup shredded monterey jack cheese
1/3 cup milk or half and half (1 or 2 additional tablespoons if needed to thin the sauce)
3 tablespoons light cream cheese
1 1/2 cloves minced garlic
INSTRUCTIONS
Sprinkle 2/3 cup monterey jack cheese over tortilla chips on a baking sheet or oven safe serving dish.
Place in preheated 350* oven to melt the cheese.
While the cheese is melting, begin the shrimp.
In a large saute pan, heat the olive oil and garlic.
Add the shrimp, season with salt and pepper, add a squeeze of lemon and saute for about 4-6 minutes.
Remove shrimp from heat and prepare creamy garlic cheese sauce.
In a small sauce pot, combine milk (or 1/2 & 1/2), cream cheese, minced garlic and shredded cheeses.
Stir until melted and add an additional tablespoon or two of milk to thin the sauce if necessary.
Once the cheese is melted on the chips, remove from oven.
Turn oven to broil.
Dice shrimp into bite sized pieces and spread it over chips.
Top with 1/4 cup shredded Parmesan cheese.
Drizzle nachos with creamy garlic cheese sauce.
Return to oven under the broiler.
Watch closely and remove nachos when all of the cheesy is melted and the garlic cheese sauce is hot and bubbly.
Delicious!
