These antipasto tortellini skewers (also called antipasto kabobs!) are just so beautiful, and since we eat with our eyes first, they make your mouth water just looking at them.Â
They are the perfect antipasto appetizer finger food for gatherings, whether that is graduation parties, baby showers, birthdays, or dinner parties….it’s like pasta salad on a stick!
Ingredients
- salami
- cherry tomatoes
- cheese tortellini
- fresh basil
- green olives
- mozzarella cheese pearls
- Italian dressing
- wooden skewers
Step by step
With just about 20 minutes you can have this easy appetizer ready to go, the longest part is just cooking the tortellini. After the pasta is cooked according to package directions, drain it and run it under cold water to allow it to cool enough to handle
Place the cooled pasta in a plastic bag and add the Italian dressing, then shake to coat the pasta well. (You can also use a large bowl and gently stir the pasta to coat it.
Thread the skewers alternating:
- olives
- grape tomato
- folded basil
- tortellini
- salami folded into quarters
- mozzarella pearl
- (repeat)
Place the skewers on a plate as you finish them and brush Italian dressing over the entire skewer before refrigerating until ready to serve! Easy peasy!
Tip: I suggest making these up to four hours ahead of time for the best taste.
Pro tip: How many skewers to make for entertaining
This recipe makes 12 large (10-inch) skewers. If you are serving a crowd, you can use smaller skewers to stretch the servings or simply double or triple the recipe to fit your needs.
If this is your primary appetizer I recommend planning on two per guest.
Variations
The beauty of the recipe (it’s almost a bit much to call it a recipe!) is that you can totally customize it to your own taste. If you don’t like an ingredient, feel free to leave it out or make a substitution.
- mozzarella pearls can be switched out for cubed cheddar, colby jack, pepper jack, or any other firm cheese
- basil can be switched with butter lettuce or baby greens
- salami can swap out with pepperoni chicken cubes, prosciutto, or another protein
- use black olives or kalamata olives instead of green
- add your favorite veggies like cucumber or zucchini
- use a pesto sauce marinade instead of salad dressing or skip the marinade and drizzle with pesto before serving
- serve drizzled with balsamic vinegar or balsamic vinaigrette
- serve mini versions on toothpicks instead of skewers
