Ingredients

  • 1 pound ground beef or ground sausage
  • 1/2 yellow onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 10-ounce can red enchilada sauce
  • 1/3 cup sour cream
  • 2 cups shredded Mexican cheese


Instructions

  1. Brown meat in a medium skillet over medium-high heat, breaking the meat apart as it cooks. Drain excess grease if necessary.
  2. Add onions and cook 3-4 minutes, stirring often, until the onions soften.
  3. Add cumin and garlic powder, then enchilada sauce. Cook an additional 3-4 minutes.
  4. Remove from heat and stir in sour cream.
  5. Transfer to a serving dish if desired and top immediately with cheese. Allow the cheese to melt for a few minutes before serving.
