This fried pickle dip takes everything I love about that crispy, salty, tangy appetizer and turns it into a scoopable, creamy delight. It’s bold, briny, and packed with that addictive dill flavor.

Why I love this recipe

I love this recipe because it’s fun to make, super flavorful, and a total conversation starter. I like to serve it chilled with a mountain of potato chips, pita chips, pretzels, or toasted baguette slices.

Ingredients

  • panko bread crumbs – classic panko bread crumbs give a crunchier topping than traditional bread crumbs
  • salted butter
  • dill pickles – pick your favorite brand and save the pickle juice, you’ll need that too!
  • sour cream – full fat is preferred for a richer flavor but you can use low fat if needed
  • cream cheese – similarly, full fat is preferred but use whatever you have on hand
  • ranch seasoning mix – I use homemade ranch seasoning or Hidden Valley Ranch mix
  • fresh dill – this is optional but a great garnish

Step by step

  1. In a skillet over medium heat, melt the butter and add the panko bread crumbs. Stir occasionally as the bread crumbs toast until golden and crunchy, around 5 minutes, then set aside.
  2. In a medium mixing bowl or stand mixer, whip the softened cream cheese until it’s smooth and creamy.
  3. Mix in the ranch seasoning, sour cream, chopped dill pickles, and a splash of pickle juice. Stir everything together until well blended.
  1. Transfer the dip into your serving dish, then sprinkle the toasted panko evenly over the top.
  2. Finish it off with a sprinkle of fresh dill just before serving if desired.

Tips for Best Results

  • Let the cream cheese soften before mixing to make it easier to blend and gives you that smooth, creamy texture.
  • Use cold pickles straight from the fridge to keep the dip cool and refreshing.
  • Don’t skip the pickle juice as it brings all that tangy, bold flavor that makes this dip pop.
  • Toast the panko until it’s golden brown, not just warm, so you get that delicious crunchy topping.

Variations

  • If you’re craving a little heat, toss in some chopped jalapeños, add a dash of hot sauce, or swap in spicy pickles.
  • Add shredded cheddar cheese or crumbled bacon to make it even more savory.
  • Try different flavored ranch mix packets like garlic ranch or jalapeño ranch.

Serving suggestions

My favorite way to serve this dip is with classic Ruffles potato chips but they are also great with pita chips, pretzels, Ritz crackers, sliced veggies, or any of your favorite dippers!

Storage

This pickle dip keeps well in the fridge for up to 3 days. Store it in an airtight container.

If you’re making it ahead of time, I recommend holding off on adding the panko topping until right before serving so it stays crisp. Give it a quick stir and fresh dill sprinkle when you’re ready to serve!
