I am a huge fan of avocado and an even bigger fan of guacamole! What’s not to love about a big dollop of creamy guac on a tortilla chip, fajitas, or even my eggs! Today I’m sharing what truly is the best guacamole dip recipe with you!

Why I love this recipe

This is a fast and easy recipe made with just a few simple ingredients. It’s a no fail authentically Mexican recipe with no unnecessary add-ins. If you can chop veggies, you can make this guac dip!

I also love that this is such a fast recipe and you don’t need anything other than a cutting board, knife, fork, and bowl…hurray for no sink full of dishes!

Ingredients

  • avocado – see tip below for picking the best ripe avocados for guacamole
  • red onion – you can use yellow onion if you do not have red on hand
  • tomatoes – I use roma tomatoes because they are fleshy and have less juice so you don’t end up with runny guacamole
  • cilantro – gives the guac its signature Mexican flavor
  • lime – fresh lime just adds so much flavor to the recipe, whenever possible use fresh over bottled
  • jalapeño – adjust the spice down by removing the ribs and seeds before dicing, leave them in for more heat
  • salt and pepper – just a bit of seasoning to finish off the dip

How to pick a ripe avocado for guacamole

In simple recipes like this, choosing the best ingredients can really make a difference. You need to pick an avocado that is ripe but not over-ripe where you end up with mushy guacamole.

Look for the stem – an intact stem on the avocado means it is less likely to have brown spots on the interior.

Press on it – the avocado should be firm with a small amount of give to it, not too soft!

How to ripen a too-hard avocado

Can’t find a ripe avocado? No worries! Place your hard avocado in your fruit bowl to quicken the ripening process. You can also place it in a paper bag with an apple the day before you make your guacamole and it will be ripe and ready for you the next day.

Step by step

  1. Pre-chop the tomato, onion, jalapeño, and cilantro.
  2. Cut the avocados in half, remove the pit and scoop out the inside into a bowl.
  3. Use a fork to mash the avocado to your desired level of “chunkiness.”
  4. Mix in chopped tomato, onion, jalapeño, cilantro, lime juice, and salt and pepper.
  5. Serve it up!

Tips for best results

This recipe tastes best fresh so mix it up just before eating when possible. Save prep time by pre-chopping your veggies.

You can make this recipe your own by varying the ingredients. Don’t like cilantro? Leave it out! Want more spice? Add cumin or dice up your favorite hot pepper.

How to store guacamole (and keep it from browning)

Serving up brown, oxidized guacamole is no fun which is why I recommend mixing it up just before serving. If you do happen to have leftover guacamole (mine is usually devoured quickly) there are a couple of options to store it without browning.

If you are just storing the guac for a day or so you can smooth the top of the guac with the back of a spoon and press plastic wrap directly onto the surface of the dip. This keeps the air from reaching the guac and oxidizing it.

For more than a day storage I cover the surface of the sip with a thin layer of cold water before storing. Simply pour the water off the dip before serving the next time.

Serving suggestions

There are so many great options for what to eat with guacamole! Serve this dip up with tortilla chips, use it to top off our shrimp nachos, add it to an oven-baked burger, serve it up with grilled grouper,

Ingredients

  • 2 Roma tomatoes, diced
  • 1 jalapeño, seeds removed, diced
  • ½ red onion, diced
  • 2 tbsp cilantro, chopped
  • 3 ripe avocados (I used Mexican Hass Avocados)
  • 1 lime, juiced
  • ¼ tsp salt, or to taste
  • ¼ tsp black pepper, or to taste

Instructions
