This easy Greek salad dressing is for more than just salads! With only a few simple ingredients, it’s packed with flavor and perfect for salad, dipping bread, roasted vegetables, marinating, and more!

I absolutely NEVER run out of this salad dressing in my fridge. I promise, once you try it you’ll feel the same way. This light and zesty dressing is everything!
Ingredients
It’s hard to explain how just a few simple ingredients you probably already have on hand can combine for such an amazing flavor.
- olive oil
- red wine vinegar
- oregano
- salt and pepper
To make the dressing simply whisk the ingredients together. You can also add them all to a mason jar and close it tightly, then shake it up to mix.
Serving suggestions
- on a simple Greek salad with romaine lettuce, cucumbers, and feta cheese
- as a dressing for pasta salad
- over roasted vegetables (even roasted frozen veggies!)
- drizzled over roast turkey breast or grilled chicken

Storage
Store this dressing in the refrigerator in an airtight container. The olive oil will cause the dressing to solidify a bit so take it out ahead of time and give it a good shake to emulsify the oil and vinegar layers together again.

- 1/2 cup extra virgin olive oil
- 6 tablespoons red wine vinegar
- 2 teaspoons oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
Whisk all ingredients together; or alternatively add all ingredients to a jar, seal the lid and shake to mix.
Notes
Store in an airtight container in the refrigerator. Allow to warm slightly and shake to mix before using.
