It's a big claim, I know. And everyone will have their own opinion on what makes the perfect - the BEST if you will - marinade for chicken. You might use Italian dressing. Or go sweet with brown sugar or pineapple juice. Maybe you kick up the heat with your favorite hot sauce. But I'm going super simple and using 3 ingredients that are in my fridge at all times. And since we basically grill all Summer long, I've have given this recipe a good work out. And declared, that this IS the BEST 3 Ingredient Chicken Marinade in all of the land {or at least in the Shaken Together household}!!
The BEST 3 Ingredient Chicken Marinade
We eat a lot of chicken. It is versatile, relatively inexpensive, healthy and quick to prepare. But, alas, I am the queen of over cooking chicken. There. I've said it. With the exception of this Slow Cooker Shredded Chicken, until this marinade came along, no matter what I did, my chicken was dry, dry, dry. No salmonella was going to take this girl down!! But I sure wasn't winning any blue ribbons in the chicken category, either.
Well friends, that has ALL changed!

Ingredients
- 16 - 18 chicken tenderloins
- 1 cup Mojo marinade
- 2 tablespoons minced garlic
- 2 tablespoons soy sauce
Instructions
- In a gallon sized zipper bag, add chicken and marinade ingredients.
- Allow chicken to marinade at least one hour but longer if time allows.
- "Sqoosh" chicken in bag several times during the time it is marinating.
To Grill Tenderloins
- Heat grill to medium heat.
- Place marinated tenderloins on the grill.
- Grill about 4 minutes on each side or until chicken reaches 165*. Cooking time may vary depending on thickness of tenderloins and grill temperature.
Mojo, soy and garlic are like the three amigos in this marinade!
If you have never used it before, you can find Mojo marinade in the Latin section of most grocery stores and big box stores. It is a flavorful blend of citrus juices (including sour orange), vinegar, onion, garlic and spices. I think the citrus juices go a long way to tenderize the chicken and keep it moist while cooking.
And I am convinced that you can never go wrong with garlic and a little soy. They just amps up the flavor of this marinade without being too overwhelming.
We use this grilled chicken all week for easy meal prep! Since the ingredients in the marinade are savory and flavorful (and just plain delicious!), this chicken works well in tons of recipes: it is delicious chopped for hearty salads, shredded and mixed with salsa for tasty tacos, sprinkled over piping hot pasta and slathered in BBQ sauce for sandwiches.
