This fun Spaghetti Sandwich was a HUGE hit with the kids last week so I thought I’d share it with you today. With the crazy grocery prices these days, I’ve been extra vigilant about not wasting food and cooking efficiently.

I’ve found myself making large batches for dinner so we have leftovers for lunch and this recipe is a fun creative way to use leftovers!

What is a Spaghetti Sandwich?

Simply put, a spaghetti sandwich is a Grilled Cheese on Garlic Toast stuffed to the brim with spaghetti noodles and sauce! I know it seems a bit off the wall, but it’s delicious! (You can use this easy garlic toast recipe to make it!)

These are much more popular in Australia and Japan, as some of my international friends have told me, but I think the US should give them a chance because they are delicious!!

Ingredients

  • leftover spaghetti with sauce (warmed in the microwave)
  • provolone or mozzarella cheese
  • thick sliced bread or leftover garlic bread
  • butter
  • garlic powder
  • Italian seasoning

Step by step

  1. Heat a small skillet over low to medium heat. Butter one side of a piece of the bread generously and sprinkle with garlic powder and Italian seasoning.
  2. Place the bread in the skillet butter side down. Top with a slice of cheese, then carefully top with the leftover spaghetti.
  3. Butter one side of the remaining piece of bread and place buttered side up on top of the spaghetti.
  4. Once the bottom piece of bread is toasted golden brown, carefully flip the sandwich and cook until golden brown and crisp. Serve hot.

Tips for Best Results

  • The thicker the bread, the easier it will be to keep the sandwich together. Slice a loaf of French Bread or simply choose the thickest sliced bread you can find.
  • You can make this with any leftover spaghetti or pasta, with meat or meatballs in the sauce or without, whatever your preference. I like to use a bolognese sauce or homemade marinara sauce if I’m feeling fancy!
  • Don’t skip seasoning the bread, it really takes the flavor over the top!
  • You can make these for a crowd on a griddle or blackstone.

Variations

You can play with this simple recipe to make it your own. Try adding cheddar or parmesan cheese to the spaghetti or top of the toasted bread. You can also skip the Italian seasoning and use dried oregano or parsley instead.

Serving suggestions

This is a great lunch on it’s own but you can also serve it with a salad (homemade Caesar salad or a simple side salad with Greek salad dressing or poppy seed dressing are a few of my favorite options.)

Description

The garlic toast stuffed with grilled cheese, spaghetti noodles, and sauce! A spaghetti sandwich that’s perfect for everyone and a great way to use up leftovers!


Ingredients

Scale
  • 1 cup leftover spaghetti with sauce
  • 1 slice provolone or mozzarella cheese
  • 2 slices thick bread
  • butter
  • garlic powder
  • Italian seasoning


Instructions

  1. In a small pan over a low heat spread bread with butter then sprinkled with garlic powder and Italian seasoning.
  2. Place one slice of butter side down on the pan. 
  3. Top the bread with cheese, then carefully add spaghetti.
  4. Add the other slice of bread, butter side up, on the top of the sandwich.
  5. Grill slowly until the bottom piece of bread is golden brown.
  6. Flip carefully and grill until the remaining bread is golden brown.
  7. Serve hot and enjoy!
