    Um, anyone else find your sweet tooth hitting a little more often than normal these days? 🙋‍♀️Luckily I have you covered! These yummy little single serve Blueberry Cakes are made in the microwave in just a few minutes so they're ready in a flash when your craving hits!

    What You'll Need:

    • ricotta cheese
    • butter
    • vanilla extract
    • maple syrup or honey
    • egg
    • flour
    • baking powder
    • salt
    • blueberries
    • powdered sugar (optional)

    How to Make Blueberry Mug Cake

    You'll whisk together the wet ingredients in a small bowl or microwave-safe mug, then add the dry ingredients before topping with the blueberries.

    Three minutes in the microwave and cake is served! I like to dust mine with a little powdered sugar when I'm feeling fancy!

    Description

    Microwave Blueberry Mug Cake is the perfect dessert recipe when your sweet tooth strikes! Just a few ingredients and five minutes later this single-serve dessert is ready to eat!


    Ingredients

    Scale
    • ¼ cup ricotta cheese
    • 2 tablespoons unsalted butter, melted
    • ½ teaspoon venilla extract
    • 3 tablespoons maple syrup or honey
    • 1 large egg
    • ¼ cup all-purpose flour
    • ¼ teaspoon baking powder
    • pinch of salt
    • ⅓ cup blueberries
    • powdered sugar for dusting (optional)

    Instructions

    1. In a small glass bowl or microwave-safe mug, whisk together ricotta cheese, melted butter, syrup, vanilla, and egg.
    2. Add flour, baking powder, and salt and stir to combine.
    3. Top with blueberries.
    4. Microwave on high for 3 minutes.
    5. Remove from microwave and dust with powdered sugar if desired.

    Notes

    • Bowl or mug will be hot when removing from microwave, use caution!
