Description

Ingredients

Scale
  • 1/4 cup ricotta cheese
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons maple syrup or honey
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • pinch of salt
  • 1/3 cup blueberries
  • powdered sugar for dusting (optional)


Instructions

  1. In a small glass bowl or microwave-safe mug, whisk together the ricotta cheese, melted butter, syrup, vanilla, and egg.
  2. Add the flour, baking powder, and salt, and stir until combined. Top with blueberries.
  3. Microwave on high for 3 minutes, then remove from the microwave.
  4. Dust with powdered sugar if desired. Serve and enjoy!

Notes

The bowl or mug will be hot when removing it from the microwave, so use caution!
