I love when fall finally arrives and I have an excuse to indulge in pumpkin everything! And what better way to start off the autumn baking than these delicious Pumpkin Oatmeal Cookies??

Ingredients
- butter
- sugar
- light brown sugar
- pumpkin puree
- egg
- vanilla extract
- flour
- quick oats
- baking soda
- cinnamon
- salt
Step by step
This recipe whips up fast and easily.
- You’ll cream together the butter and sugars then add the pumpkin, egg, and vanilla.
- After mixing the oats and other dry ingredients in a separate bowl, you’ll add it to the wet mixture little by little until blended.
- A quick drop by spoonfuls onto a baking sheet and 15 minutes later you’re in warm pumpkin cookie heaven!
Drizzle them with a caramel glaze, add butterscotch or chocolate chips, put a scoop of softened ice cream in between two of these for rockin’ ice cream sandwiches … or just eat them warm from the oven. Yeah, that’s how we roll in our house!
Tips for best results
- When measuring flour, avoid scooping it from the container as it packs it down and results in too much flour in the dough. Instead, use a spoon to add it to your measuring cup, and level it off the top with the back of a knife.
- Let the cookies cool on the cookie sheet for a few minutes before moving them so they don’t break up.

Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1 cup packed light brown sugar
- 1 cup pumpkin puree
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 1/3 cups quick oats
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
Instructions
- Preheat oven to 350° Fahrenheit. Line a baking sheet with parchment paper.
- In a mixer or large bowl, combine butter and sugars. Mix on medium speed until combined a fluffy.
- Add pumpkin, egg, and vanilla and mix until blended.
- In a separate bowl, combine flour, oats, baking soda, cinnamon and salt. Stir to mix.
- Add flour mixture a little at a time to mixing bowl, stirring to mix.
- Use a small cookie scoop or tablespoon to portion cookies onto prepared baking sheet.
- Bake 14-16 minutes or until center is set.
- Cool on baking sheet three minutes before moving to wire rack.
