I love when fall finally arrives and I have an excuse to indulge in pumpkin everything! And what better way to start off the autumn baking than these delicious Pumpkin Oatmeal Cookies??

Ingredients

  • butter
  • sugar
  • light brown sugar
  • pumpkin puree
  • egg
  • vanilla extract
  • flour
  • quick oats
  • baking soda
  • cinnamon
  • salt

Step by step

This recipe whips up fast and easily.

  1. You’ll cream together the butter and sugars then add the pumpkin, egg, and vanilla.
  2. After mixing the oats and other dry ingredients in a separate bowl, you’ll add it to the wet mixture little by little until blended.
  3. A quick drop by spoonfuls onto a baking sheet and 15 minutes later you’re in warm pumpkin cookie heaven!

Drizzle them with a caramel glaze, add butterscotch or chocolate chips, put a scoop of softened ice cream in between two of these for rockin’ ice cream sandwiches … or just eat them warm from the oven.  Yeah, that’s how we roll in our house!

Tips for best results

  • When measuring flour, avoid scooping it from the container as it packs it down and results in too much flour in the dough. Instead, use a spoon to add it to your measuring cup, and level it off the top with the back of a knife.
  • Let the cookies cool on the cookie sheet for a few minutes before moving them so they don’t break up.

Ingredients

Scale
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup packed light brown sugar
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 1/3 cups quick oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350° Fahrenheit. Line a baking sheet with parchment paper.
  2. In a mixer or large bowl, combine butter and sugars. Mix on medium speed until combined a fluffy.
  3. Add pumpkin, egg, and vanilla and mix until blended.
  4. In a separate bowl, combine flour, oats, baking soda, cinnamon and salt. Stir to mix.
  5. Add flour mixture a little at a time to mixing bowl, stirring to mix.
  6. Use a small cookie scoop or tablespoon to portion cookies onto prepared baking sheet.
  7. Bake 14-16 minutes or until center is set.
  8. Cool on baking sheet three minutes before moving to wire rack.
