Pumpkin Spice No Bake Cookies

Give a classic recipe a fall twist with these easy and delicious Pumpkin No Bake Cookies. With just a few simple ingredients like butter, milk, and pumpkin spice pudding mix and 20 minutes, you’ll have a delicious fall treat!

I’m a huge fan of no bake desserts and love experimenting with no bake cookies, trying new variations and add ins. These Pumpkin Spice No Bake Cookies taste just like a cinnamon-y old school oatmeal cookie with the right amount of pumpkin spice goodness!  

Ingredients

  • butter
  • sugar
  • milk
  • Pumpkin Spice pudding mix
  • quick oats
  • vanilla extract

Step by step

  1. Heat butter, milk, and sugar on the stove.
  2. Stir in pudding mix and oats and allow the mixture to set a few minutes.
  3. Scoop cookies onto a parchment paper-lined baking sheet and allow to cool!

Variations

  • add in chocolate or caramel chips
  • add chopped nuts
  • add dried cranberries or raisins

Tips for best results

  • Have all of your ingredients ready and measured before starting this No-Bake Cookie recipe. It moves quickly!
  • If your cookies aren’t firming up quickly enough, place them in the refrigerator to speed the process.
  • If you are in a very humid environment or it is raining the cookies may not set up at room temperature, you will need to refrigerate them.
  • This recipe makes a BIG batch of small cookies. Feel free to adjust and make larger cookies if desired.

Description

Give a classic recipe a fall twist with these easy and delicious Pumpkin No Bake Cookies. With just a few simple ingredients and 20 minutes, you’ll have a delicious fall treat!


Ingredients

Scale

  • 2 cups granulated sugar
  • 3/4 cup butter
  • 2/3 cup milk
  • 1 small box pumpkin spice pudding mix
  • 3 1/2 cups quick cook oats
  • 1/2 teaspoon vanilla extract
  • pumpkin pie spice to sprinkle on top (optional)


Instructions

  1. In a large pan, stir together sugar, butter and milk.
  2. Bring to a boil and allow to boil for 2 minutes.
  3. Turn off the heat and stir in the pudding mix until thoroughly incorporated.
  4. Stir in vanilla and oats.  Allow the mixture to stand for 5 minutes to thicken.
  5. Drop by tablespoons onto waxed paper and sprinkle with pumpkin pie spice if desired.
  6.  Allow to cool completely and store in an air tight container.

    1. Super easy to make but very sweet with the sugar in the pudding. I’d reduce to one cup granulated sugar next time. Delicious!

    1. I found the pumpkin spice pudding at our local Walmart and I’ve seen it at Target as well. If you can’t find it, you could try a vanilla pudding and add some pumpkin pie spice, perhaps?!

  21. Use Butterscotch Pudding, add spice if needed. I have a pumpkin mousse recipe that uses it and it adds a nice richness to the background… now you can make it all year long!!

      1. Hi Judy – this recipe actually used a box of pumpkin spice pudding mix and I only used the pumpkin pie spice to sprinkle on top. If you are going to use butterscotch, you may want to start with 1/2 teaspoon and increase the spice to taste. Hope that helps and thanks so much for stopping by!
