My kids’ absolute favorite cereal is Cinnamon Toast Crunch and one day I was looking at the box and thought….why not turn it into dessert? A few minutes later, these gooey marshmallow cereal treats were born and disappeared just as fast.
Why I love this recipe
I love the contrast of the ooey-gooey marshmallow coating with the crispy cereal crunch. It’s similar to classic Rice Krispie Treats but with a cinnamon kick. I also like how fast they come together with zero baking involved. They’re the treat I can count on to disappear first.
To keep the cinnamon-y vibes going, don’t miss my cinnamon roll waffles or cinnamon apple cake.
Ingredients
Before we start stirring and snacking, let’s pull together our short and simple ingredients. Nothing fancy here. Just three everyday ingredients.

- cinnamon sugar cereal
- mini marshmallows
- butter or margarine
Step by step
No need for fancy equipment or complicated steps. Just melt, mix, and press. These treats come together in minutes with hardly any effort.

- Lightly coat a baking dish with nonstick cooking spray. Set aside.
- Place the marshmallows and butter pieces into a large mixing bowl.
- Microwave until the marshmallows puff up, then stir until the mixture is smooth and combined.
- Quickly add the cereal and mix well so it’s fully coated.
- Spoon the cereal and marshmallow mixture into the prepared pan and press it down evenly.
- Let it cool and firm up for about an hour before slicing into squares and serving.

Tips for Best Results
- Use fresh marshmallows for soft, gooey texture. Older ones can make the bars stiff or dry.
- Lightly coat your hands or a spatula with nonstick spray to keep the mixture from sticking as you press it into the pan.
- Avoid overheating the marshmallows. Once they’re melted, take them off the heat. Overcooking will make the bars chewy and dense.
- Let the cereal bars cool completely before slicing to get clean, even pieces.

Variation
Add your twist with a few easy mix-ins. You can stir in cinnamon chips, drizzle chocolate on top, or toss in a pinch of flaky salt.
Storage
To hold onto that chewy texture, keep the Cinnamon Toast Crunch bars in a tightly sealed container at room temperature. Avoid the refrigerator since it makes them stiff. If you freeze them, let them come back to room temperature before eating.
