As a busy parent, I’m always searching for fun and easy treats to whip up with my kids. These Oatmeal Scotchies No Bake Cookies have quickly become one of our favorite fall recipes! With no oven required, I can easily involve my kids in the kitchen, making it a delightful bonding experience!

Ingredients

  • light brown sugar
  • granulated sugar
  • butter
  • milk
  • butterscotch instant pudding mix
  • vanilla extract
  • quick-cook oats
  • butterscotch chips

Make sure you are using quick oats in this recipe, old-fashioned oats will be too tough with this cooking method.

Step by step

  1. In a large saucepan or pot, combine the sugars, butter, and milk. Bring the mixture to a boil, stirring constantly for about 2 minutes. Remove the pot from the heat and stir in the vanilla extract.
  2. Add the pudding mix and oats, mixing until well combined. Let the mixture cool slightly for about 2 minutes, then stir in the butterscotch chips.
  3. Spoon the cookie dough mixture onto parchment-lined baking sheets and allow the cookies to set.

Ingredients

  • 1 cup light brown sugar (packed)
  • 1 cup granulated sugar
  • 3/4 cup butter
  • 2/3 cup milk
  • 1 small box of 3.4 oz butterscotch instant pudding and pie filling
  • 1/2 teaspoon vanilla extract
  • 3 1/2 cups quick cook oats
  • 1 cup butterscotch chips

Instructions

  1. In a large pot, combine the sugars, butter, and milk. Bring the mixture to a boil, stirring constantly for about 2 minutes. Remove the pot and stir in the vanilla extract.
  2. Add the pudding mix and oats, mixing until well combined. Let the mixture cool slightly for about 2 minutes, then stir in the butterscotch chips.
  3. Spoon the mixture onto a parchment-lined tray and allow the cookies to set.
