Olive Garden Chicken Gnocchi Soup is easier than you think to make at home! This copycat version is just as creamy and full of flavor as the original version with soft pillowy gnocchi potato dumplings, chicken, and spinach, and best of all – it can be on the table in just 35 minutes!

My husband’s very favorite dish to order at Olive Garden is the creamy Chicken Gnocchi Soup (I’m more of a salad and breadsticks kind of girl) so it was only a matter of time until he asked me to experiment with making it at home.
Luckily it didn’t take much recipe testing to make this easy copycat recipe and now we have a new favorite to add to our soup recipes!

Ingredients
The ingredient list may look a little longer than most of my recipes but it is all simple ingredients and you probably already have most of them on hand.
- chicken breasts
- onion
- garlic
- carrots
- olive oil
- butter
- all purpose flour
- chicken broth
- salt and pepper
- thyme
- potato gnocchi (find in the pasta aisle at the store)
- milk
- chopped fresh spinach
Step by step
- Cube chicken breasts and sauté in a large pot or dutch oven over medium-high heat until cooked through.
- Remove the chicken to a separate bowl, set aside.
- Add olive oil and butter to the pot along with onion, garlic, and carrots. Sauté 2-3 minutes or until onions begin to be translucent.
- Add chicken broth, chicken, and thyme. Bring to a boil.
- Add gnocchi and continue to boil for 4 minutes. Reduce heat and simmer 10 minutes.
- Stir in milk and spinach. Cook 2-3 minutes or until spinach is wilted and tender.
- Season to taste with salt and pepper and serve with grated parmesan cheese if you wish!
Storage
- Keep leftovers in an airtight container in the refrigerator up to 5 days.
- Reheat on the stovetop over medium low heat for best results
- Freeze in a freezer-safe container up to 3 months.
Variations and substitutions
- you may use half and half or even heavy cream instead of milk for an even more creamy broth
- save time by using leftover or rotisserie chicken
- many recipes add chopped celery with the other vegetables, I prefer without it but you can add one chopped stalk if you desire

- 4 chicken breasts, diced
- 1/2 medium yellow onion, diced
- 2 teaspoons minced garlic (about 4 cloves)
- 1/2 cup shredded carrots
- 1 tablespoon extra virgin olive oil
- 4 tablespoons unsalted butter
- 1/4 cup all purpose flour
- 4 cups chicken broth
- 1 teaspoon fresh thyme
- 16 ounce package potato gnocchi
- 1 cup chopped spinach
- parmesan cheese (optional)
Instructions
- In a large pot or dutch oven, add diced chicken breast and sauté until cooked through, about 5-6 minutes. Remove from pot and set aside.
