I wasn’t a huge cake fan growing up, that is until I tried my mom’s favorite carrot cake recipe. That moist cake with oh-so-delicious cream cheese frosting won me over immediately! It is one of my favorite desserts. This delicious carrot cake dip I’m sharing today has all the same carrot cake flavors in dip form!

Why I love this recipe

You can enjoy all the flavors of carrot cake without the baking, cooling, and frosting! This sweet dip whips up in minutes so you can satisfy your sweet tooth in a flash!

Ingredients

You only need a handful of simple ingredients for this sweet treat!

  • cream cheese
  • marshmallow fluff
  • crushed pineapple
  • sweetened coconut flakes
  • chopped pecans
  • carrot cake cake mix

Food Safety Tip

While rare, it is possible to get sick from raw flour. We recommend spreading the dry cake mix out on a baking sheet and bake it for five minutes at 350°F to be safe.

Step by step

  1. Bake cake mix for 5 minutes. Set aside to cool.
  2. Using a hand or stand mixer, blend together the softened cream cheese and marshmallow fluff.
  3. Mix in pineapple, coconut, chopped pecans and carrot cake cake mix into the cream cheese mixture.
  4. Allow to chill at least one hour.
  5. Serve with your favorite dippers: apple slices, pretzels, nilla wafers, golden oreos, or graham crackers.

Variations

There are SO many variations when it comes to making carrot cake and the same can be said for this delicious dip!

  • switch out the marshmallow fluff with cool whip
  • substitute chopped walnuts for the pecans
  • add in shredded carrots, apples, or even raisins for a different texture

Storage

If serving this dip at a party do not leave out at room temperature for more than 2 hours.

Store leftover dip in an airtight container in the refrigerator up to 3 days.
