Why I love this recipe

I’m all about efficiency in the kitchen, and this recipe delivers. It’s incredibly easy to make, requiring just a few simple steps and minimal ingredients. Also, this recipe reminds me of cozy family dinners where the aroma of smoky sausage and rich cheese sauce filled the house.

Ingredients

cheesy kielbasa pasta ingredients
  • penne pasta
  • extra virgin olive oil
  • smoked kielbasa sausage
  • yellow onion
  • garlic
  • all-purpose flour
  • chicken broth
  • heavy cream
  • black pepper
  • dried oregano and thyme
  • cheddar and Parmesan cheese

Step by step

  1. Cook the pasta according to the package directions. Don’t forget to save about ½ cup of the cooking water before you drain the pasta, you’ll need it later.
  2. In a large skillet, heat up some olive oil over medium-high heat.
  3. Add the sausage slices and let them cook for about 2 minutes on each side until they are browned.
  4. Toss in the chopped onion and cook for another 2 minutes, or until it’s softened. Add the garlic and cook for 30 seconds, stirring often to keep it from burning.
  1. Sprinkle the flour over the sausage and onion mixture, and stir to coat everything. Slowly pour in the chicken broth, stirring constantly to avoid lumps.
  2. Add the heavy cream, dried oregano, thyme, and a pinch of black pepper. Stir well and bring the mixture to a boil. Reduce the heat and let it simmer for about 3 minutes.
  3. Gradually sprinkle in the shredded cheddar and Parmesan, stirring as they melt into the sauce.
  4. Finally, add the reserved pasta cooking water and the cooked pasta. Stir everything together until the pasta is well coated in the creamy, cheesy sauce. Enjoy!

Tips for Best Results

  • Cook the pasta al dente as it will continue to cook slightly when mixed with the sauce.
  • Don’t skip the reserved pasta water as it helps to loosen the sauce and add extra flavor.
  • I recommend freshly grated parmesan over pre-grated to avoid a grainy final texture.

Variations

You can mix in some fresh spinach for added greens or use different types of cheese like gouda or mozzarella for a unique twist.

You could also substitute the kielbasa with other sausages or even chicken for a different protein option.

Serving suggestions

  • serve with a fresh green salad on the side for a complete meal
  • garlic bread pairs perfectly with the creamy sauce

Storage

Store leftovers in an airtight container and refrigerate for up to 3 days.

When you’re ready to reheat, add a splash of milk or broth to bring back the creamy texture. You can reheat it in the microwave on medium, stirring occasionally, or warm it up in a skillet over medium heat until it’s thoroughly heated.
