Cheesy Kielbasa Pasta is a quick and delicious meal featuring smoky kielbasa, creamy cheese, and tender pasta. It is the perfect comfort food for busy weeknights or a cozy weekend dinner.

- 12 ounce penne pasta
- 2 tablespoons extra virgin olive oil
- 14 ounce smoked kielbasa sausage
- 1 small yellow onion
- 2 clove garlic
- 2 tablespoons all-purpose flour
- 1 ½ cups chicken broth
- 1 ½ cups heavy cream
- ¼ teaspoon dried oregano
- ¼ teaspoon thyme
- ¼ teaspoon black pepper
- 1 ½ cups shredded cheddar cheese
- ½ cup Parmesan cheese
Instructions
- Cook the pasta according to the package directions. Reserve ½ cup of cooking water before draining. Set them aside.
- In a large skillet, heat up some olive oil over medium-high heat. Once it’s hot, add the sausage slices and let them cook for about 2 minutes on each side until they are browned.
- Toss in the chopped onion and cook for another 2 minutes, or until it’s softened.
- Add the garlic and cook for 30 seconds, stirring often to keep it from burning.
- Sprinkle the flour over the sausage and onion mixture, and stir to coat everything. Slowly pour in the chicken broth, stirring constantly to avoid lumps.
- Add the heavy cream, dried oregano, thyme, and a pinch of black pepper. Stir well and bring the mixture to a boil. Reduce the heat and let it simmer for about 3 minutes.
- Sprinkle in the shredded cheddar and Parmesan, stirring as they melt into the sauce.
- Add the reserved pasta cooking water and the cooked pasta. Stir everything together until the pasta is well coated in the creamy, cheesy sauce.
Notes
I recommend freshly grated parmesan over pre-grated to avoid a grainy final texture.
