Description

Cheesy Kielbasa Pasta is a quick and delicious meal featuring smoky kielbasa, creamy cheese, and tender pasta. It is the perfect comfort food for busy weeknights or a cozy weekend dinner.


Ingredients

  • 12 ounce penne pasta
  • 2 tablespoons extra virgin olive oil
  • 14 ounce smoked kielbasa sausage
  • 1 small yellow onion
  • 2 clove garlic
  • 2 tablespoons all-purpose flour
  • 1 ½ cups chicken broth
  • 1 ½ cups heavy cream
  • ¼ teaspoon dried oregano
  • ¼ teaspoon thyme
  • ¼ teaspoon black pepper
  • 1 ½ cups shredded cheddar cheese
  • ½ cup Parmesan cheese

Instructions

  1. Cook the pasta according to the package directions. Reserve ½ cup of cooking water before draining. Set them aside.
  2. In a large skillet, heat up some olive oil over medium-high heat. Once it’s hot, add the sausage slices and let them cook for about 2 minutes on each side until they are browned.
  3. Toss in the chopped onion and cook for another 2 minutes, or until it’s softened.
  4. Add the garlic and cook for 30 seconds, stirring often to keep it from burning.
  5. Sprinkle the flour over the sausage and onion mixture, and stir to coat everything. Slowly pour in the chicken broth, stirring constantly to avoid lumps.
  6. Add the heavy cream, dried oregano, thyme, and a pinch of black pepper. Stir well and bring the mixture to a boil. Reduce the heat and let it simmer for about 3 minutes.
  7. Sprinkle in the shredded cheddar and Parmesan, stirring as they melt into the sauce.
  8. Add the reserved pasta cooking water and the cooked pasta. Stir everything together until the pasta is well coated in the creamy, cheesy sauce. 

Notes

I recommend freshly grated parmesan over pre-grated to avoid a grainy final texture.
