You know those dishes you find yourself making all the time because they’re just so darn good like out Lemon Butter Chicken and Asparagus or Chicken Pot Pie Casserole? This Tuscan Chicken Pasta is one of those dishes! From the garlic infused creamy sauce to the sweet sun dried tomatoes, there is flavor abound in this 30 minute meal.

Ingredients

  • olive oil
  • chicken breasts
  • chicken stock or chicken broth
  • heavy cream
  • garlic powder
  • Italian seasoning
  • Parmesan cheese
  • baby spinach
  • sun dried tomatoes
  • angel hair pasta

Step by step

  1. Boil water in a large pot and cook pasta according to package instructions.
  2. Heat olive oil in a large skillet over medium high heat. Cut chicken into bite-size pieces and sauté until cooked through. Set aside.
  3. Add chicken stock to the pan and scrape the bottom to deglaze all those flavorful bits.
  4. Add heavy cream, seasonings, and cheese and stir to mix. Bring to a simmer.
  5. Add spinach and tomatoes and cook until spinach is wilted.
  6. Toss with drained pasta and serve!

Variations

  • use a different type of pasta such as penne, fettuccine, or farfalle
  • spice the sauce up with red pepper flakes
  • garnish with fresh basil
  • use shredded chicken thighs or rotisserie chicken instead of boneless skinless chicken breast

Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 1 tablespoon extra virgin olive oil
  • 1 cup chicken stock
  • 2 cups heavy cream
  • 2 teaspoons garlic powder
  • 2 teaspoons Italian seasoning
  • 1 cup shredded Parmesan cheese
  • 2 cups spinach, chopped
  • 3 ounce package julienned sun dried tomatoes
  • 16 ounce package angel hair pasta

Instructions

  1. Start pasta water boiling and cook according to package instructions.
  2. Cube chicken into bite size pieces.
  3. Add olive oil to a large skillet and warm over medium high heat. Add chicken and cook through, stirring to ensure all side cook evenly. Remove chicken from pan and set aside.
  4. Add stock to the pan and scrape the bottom to deglaze. Add cream, seasonings, and cheese and stir to mix as the sauce thickens, about 5 minutes.
  5. Add chicken back to pan along with spinach and tomatoes and continue to simmer 5 minutes or until spinach is fully wilted.
  6. Transfer cooked pasta to the pan and stir to coat before serving.
