Step by step

  2. In a small bowl, combine the brown sugar, cayenne pepper, paprika, and black pepper. Stir until everything is evenly mixed, then set it aside.
  3. Wrap one slice of bacon around each little smokie and secure it with a toothpick. Place it on the prepared baking sheet. Continue until all the smokies are wrapped.
  4. Sprinkle half of the brown sugar mixture evenly over the bacon wrapped smokies.
  5. Bake for 15 minutes. Carefully turn each piece over, then sprinkle the remaining brown sugar mixture on top.
  6. Bake for another 15 minutes, or until the bacon is crisp and caramelized.

How to cook little smokies in an air fryer

Preheat the air fryer to 375°F and lightly grease the basket. Air fry for 6–7 minutes, flip, then air fry for another 6–7 minutes, or until the bacon turns crisp and the sugar forms a caramelized coating.

Tips for Best Results

  • Definitely use foil to line the pan to make cleanup MUCH easier!
  • Use regular thin-sliced bacon for the crispiest results. If you use thick-cut bacon, you may need to lightly pre-cook it until it is still pliable before wrapping. Thick bacon may not crisp as much in the same amount of time.
  • Flip the smokies halfway through baking and add the second round of sugar at that point. This ensures both sides get that beautiful caramelized coating.
  • Use toothpicks to keep everything together while they bake and to make them easy for guests to grab.

Variations

For more flavor, brush on some BBQ sauce after baking and pop them under the broiler on high for a few minutes. Trust me on this one. For a smokier, deeper flavor, swap the paprika for smoked paprika — it pairs beautifully with the bacon and adds an extra layer of richness.

Ingredients

  • 1 pound sliced bacon, cut into thirds
  • 1 pound little smokies
  • ¾ cup brown sugar
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon paprika
  • ⅛ teaspoon black pepper


Instructions

  1. Preheat oven to 350°F. Line a large rimmed baking tray with foil and lightly grease with cooking spray.
  2. In a small bowl, combine the brown sugar, cayenne pepper, paprika, and black pepper. Mix and set aside.
  3. Take a piece of cut bacon and wrap it around one of the smokies. Secure it with a toothpick and place onto the prepared tray. Repeat with the remaining sausage and bacon.
  4. Sprinkle half of the brown sugar mixture on top of the bacon wrapped smokies.
  5. Bake for 15 minutes. Flip each of the smokies over and sprinkle the remaining brown sugar mixture on top of them. Bake for an additional 15 minutes, or until bacon is crispy.
