Soft & Chewy No Bake Birthday Cake Cookies
If you are just stopping by and wondering what all the birthday cake and exclamation points are about, you, my friend, have found yourself in the middle of birthday week!!  I have made ice cream cupcakes, dessert dip, cream cheese (cake batter for breakfast!!) and now, cookies … all featuring confetti birthday cake!
Just as you would expect from the pictures, these sweet little no bake gems are full of brown sugar and oatmeal.  Oh, and confetti cake mix.  And sprinkles, naturally! When I was tweaking my basic no-bake cookie recipe and dreaming up a version that was bursting with birthday cake, I was a little sad that there is not a cake batter flavored pudding mix (Hey Jell-O … that would be amazing!!!).  And I started brainstorming how I could get big birthday cake flavor in little no bake cookies.  And the answer was staring me right in the face … in a package of confetti cake mix left over from the Cake Batter Cream Cheese I shared yesterday.
Soft & Chewy No Bake Birthday Cake Cookies

Description
A birthday is not a birthday without a cake. These soft & chewy no bake birthday cake cookies are a great way to have your cake without even turning on your oven!
Ingredients
- 1 cup granulated sugar
- 1 cup light brown sugar (packed)
- 3/4 cup butter
- 2/3 cup milk
- 1/2 teaspoon vanilla extract
- 1 cup Duncan Hines confetti cake mix
- 3 1/2 cups quick cooking oats
- Sprinkles {optional but SO fun!}
Instructions
- In a large pot, bring sugars, butter and milk to a boil.
- Allow to boil for 2 minutes, stirring constantly.
- Remove the pot from the heat and stir in vanilla extract.
- Stir in cake mix and oats.
- Allow mixture to set for about 5 minutes.
- Spoon cookies onto a parchment lined tray {this is where you add sprinkles if you would like} and allow cookies to set.
Notes
I used almond milk in place of regular milk, so feel free to substitute it if you would like. I use my small Pampered Chef cookie scoop to scoop out the cookies, so you may get more or less cookies depending on the size you make them.
These no bake cookies are soft and chewy – more so than my recipes that use a box of pudding mix.  So, don’t expect that little crunchy shell to develop.  Nope, these no bake birthday cake cookies are softies in the best possible way!
You can never have too many sprinkles … now let them eat cake!!

Okay but shouldn’t you bake the cake flour because you are actually supposed to cook flour?
