Soft & Chewy No Bake Birthday Cake Cookies

Description

A birthday is not a birthday without a cake. These soft & chewy no bake birthday cake cookies are a great way to have your cake without even turning on your oven!


Ingredients

Scale
  • 1 cup granulated sugar
  • 1 cup light brown sugar (packed)
  • 3/4 cup butter
  • 2/3 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 cup Duncan Hines confetti cake mix
  • 3 1/2 cups quick cooking oats
  • Sprinkles {optional but SO fun!}


Instructions

  1. In a large pot, bring sugars, butter and milk to a boil.
  2. Allow to boil for 2 minutes, stirring constantly.
  3. Remove the pot from the heat and stir in vanilla extract.
  4. Stir in cake mix and oats.
  5. Allow mixture to set for about 5 minutes.
  6. Spoon cookies onto a parchment lined tray {this is where you add sprinkles if you would like} and allow cookies to set.

Notes

I used almond milk in place of regular milk, so feel free to substitute it if you would like. I use my small Pampered Chef cookie scoop to scoop out the cookies, so you may get more or less cookies depending on the size you make them.
