{taste this} pumpkin layer dessert

Welcome to another {taste this} here at shaken together!  This is the second recipe in my fall baking series (golden oatmeal muffins are here if you missed them) and this delicious 3 layer pumpkin dessert comes straight from my grandma's kitchen!  


As you know, I love desserts that are quick, easy and tasty and this recipe meets all 3 of those requirements!!  Let's get started ...

I love that this dessert combines layers of three different sweets:  cake, pie and crumble!


Cake Layer
1 box yellow/golden butter cake mix (reserve 1 cup of the dry mix)
1/2 cup butter (1 stick), melted
2 eggs

Mix together and spread into the bottom of a 9 x 13 pan.

Pumpkin Pie Layer
2 eggs
2/3 cup evaporated milk
1 large can  (30 oz.) pumpkin pie mix

Mix together and pour over cake mix layer.

Crumble Topping Layer
1 cup reserved dry cake mix
1/4 cup brown sugar (packed)
1 tsp. cinnamon
3 tablespoons butter

Cut the butter into the dry ingredients until crumbly.  Sprinkle over pumpkin layer.

Bake at 350* for about 40 minutes or until middle is firm and a toothpick comes out clean. 

The bottom cake layer is fluffy, the pumpkin pie layer is rich and filled with fall spices and the crumble layer is the perfect sweet finish!  This would be a surprise twist on pumpkin pie for Thanksgiving or a sweet and spicy addition to any fall brunch!

  33. I just made this today and it is incredibly balanced and delicious!! I did add some dried instant oatmeal to the crumbly topping and served with cool whip. Truly an awesome Fall dessert that I look forward to making at family gatherings. Thank you! :)

  34. Can I put this together, refrigerate, and bake the next morning? I don't want to cook ahead and have the topping get soft since pumpkin desserts usually need to be stored in frig.
