Lasagna has always been a comfort food favorite of mine, but I wanted to try something a little different. I have done sheet pan lasagnas, skillet lasagna, slow cooker lazy lasagna, even lasagna roll-ups but recently I discovered spicy lasagna soup and it just might be my favorite yet!
This soup combines all the rich, cheesy goodness of lasagna with a kick of spice that takes it to the next level. I’m sure you’re going to love this one-pot wonder once you try it!
Why I love this recipe

Ingredients
- vegetable oil
- spicy Italian sausage
- tomato paste
- crushed tomatoes
- lasagna noodles
- Veggies: yellow onion, red bell peppers
- Liquid ingredients: chicken broth, milk, and water
- Cheeses: Parmesan and mozzarella
- Seasonings: garlic cloves, Italian seasoning, dried oregano, and parsley
If you don’t have Italian seasoning you can make your own by combining 1.5 teaspoons dried oregano, 1 teaspoon dried marjoram, 1 teaspoon dried thyme, 1/2 teaspoon dried basil, 1/2 teaspoon dried rosemary, and 1/2 teaspoon dried sage. Mix together then measure out the amount required for the recipe.
Step by step
- In a large pot, add the oil, onions, and peppers, and cook over medium to high heat for 4–5 minutes, until the veggies start to soften a little.
- Next, add the garlic and sausage to the pot, stir, and cook until the sausage is browned.
- Once the sausage is browned and crumbled, add the oregano, Italian seasoning, tomato paste, crushed tomatoes with juice, chicken broth, milk, and water. Stir well to combine.
- Now, bring the mixture to a boil, then add your broken lasagna noodles.
- Turn the heat to a low and simmer for about 10 minutes, stirring occasionally to prevent sticking. Once done, add the mozzarella and stir.
- Ladle the soup into bowls and top with extra mozzarella, parmesan, and fresh parsley.

- Use High-Quality Sausage: For the best flavors, opt for a good-quality spicy Italian sausage.
- Adjust Spice Level: If you like it spicier, you can add a pinch of red pepper flakes.
- Stir Often: To prevent the noodles from sticking ensure to stir the soup occasionally while it simmers.
- Cheese: Don’t skimp on the cheese—adding extra mozzarella and Parmesan or even a dollop of ricotta cheese on top makes each bowl extra delicious.

- For a milder version, use regular Italian sausage instead of spicy, or Jimmy Dean sausage but add extra Italian seasoning.

Storage
Store leftovers in an airtight container and store them in the fridge for to 2-3 days. When you’re ready to enjoy it again, reheat it on the stove over medium heat, stirring now and then.
You can also freeze the soup for up to 3 months. Just make sure it cools completely before moving it to a freezer-safe container. To reheat from frozen, let it thaw in the fridge overnight before warming it up.

- 3 tablespoons vegetable oil
- 1 onion, diced
- 2 red bell peppers, sliced
- 5 cloves garlic, minced
- 1 pound of spicy Italian sausage
- 1 teaspoon dried oregano
- 1 teaspoon Italian seasoning
- 1/3 cup of tomato paste
- (1) 28 oz can of crushed tomatoes (do not drain)
- 4 cups of chicken broth
- 1/2 cup milk
- 1 cup of water
- 16 oz box of lasagna noodles, each one broken into 4 pieces
- 1 cup of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- chopped fresh parsley, optional
Instructions
- Add the oil, onions, and peppers to a large pot or dutch oven and cook over medium to high heat for 4–5 minutes, until the veggies start to soften.
- Add the garlic and sausage to the pot, stir, and cook until the sausage is browned, breaking the sausage apart as it cooks.
- Add the oregano, Italian seasoning, tomato paste, crushed tomatoes with juice, chicken broth, milk, and water. Stir well to combine.
- Bring the mixture to a boil, then add your broken lasagna noodles. Stir.
- Turn the heat to a low and simmer for about 10 minutes, stirring occasionally to prevent sticking.
- Add mozzarella and stir to mix.
- Ladle the soup into bowls and top with extra mozzarella, parmesan, and fresh parsley if desired.
