Description

Spicy Lasagna Soup brings all the beloved tastes of lasagna into a comforting soup. With spicy sausage and tender noodles in a rich tomato base, topped with melted cheese, this dish is perfect for a cozy night in.


Ingredients

  • 3 tablespoons vegetable oil
  • 1 onion, diced
  • 2 red bell peppers, sliced
  • 5 cloves garlic, minced
  • 1 pound of spicy Italian sausage
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • 1/3 cup of tomato paste
  • (1) 28 oz can of crushed tomatoes (do not drain)
  • 4 cups of chicken broth
  • 1/2 cup milk
  • 1 cup of water
  • 16 oz box of lasagna noodles, each one broken into 4 pieces
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese 
  • chopped fresh parsley, optional

Instructions

  1. Add the oil, onions, and peppers to a large pot or dutch oven and cook over medium to high heat for 4–5 minutes, until the veggies start to soften.
  2. Add the garlic and sausage to the pot, stir, and cook until the sausage is browned, breaking the sausage apart as it cooks.
  3. Add the oregano, Italian seasoning, tomato paste, crushed tomatoes with juice, chicken broth, milk, and water. Stir well to combine.
  4. Bring the mixture to a boil, then add your broken lasagna noodles. Stir.
  5. Turn the heat to a low and simmer for about 10 minutes, stirring occasionally to prevent sticking.
  6. Add mozzarella and stir to mix.
  7. Ladle the soup into bowls and top with extra mozzarella, parmesan, and fresh parsley if desired.
