    Peach Shortcake - An Easy Summer Dessert

    Long, long ago, when this blog was a baby {almost 3 years ago!}, I shared my grandma's shortcake biscuit recipe and made Summer Strawberry Shortcake.  The pictures in that post are nothing to write home about, but I literally dream about those shortcake biscuits. They are, hands down, my favorite Summer dessert topped with whatever fruit is in season!  So, a few weekends ago, I decided to forego the usual strawberries and whip up a quick batch of biscuits for ...

    Peach shortcake - easy, delicious and perfect for Summer!

    Now, I could have just run to the grocery store to pick up those packaged yellow sponge cakes for shortcake.  And I have from time to time, so no judging here.  But nothing beats my grandma's shortcake biscuits!

    Why make individual shortcake biscuits when you can make one big impressive shortcake biscuit, pile on spiced peaches just dripping with peach-y sauce and top it with a big ol' dollop of whipped cream?!  It's sort of like a glorious Summer peach shortcake pie!

    Have your extra peach topping on standby so you can pile on more peaches and juice once you have cut this beautiful biscuit pie into wedges.  And it never hurts to have extra whipped cream on hand!

    Peach Shortcake

    Ingredients

    Scale

    Shortcake Biscuits

    • 2 cups flour
    • 2 tablespoons granulated sugar
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • ½ cup 1 stick cold butter
    • 1 egg (beaten)
    • ⅔ cup evaporated milk

    Peach Topping

    • 3 cups fresh or frozen peaches (peeled and cut into slices)
    • ½ teaspoon of ground cinnamon
    • ¼ teaspoon of ground ginger
    • 2 tablespoons of granulated sugar
    • Squeeze of lemon juice (I actually used one drop of Young Living lemon essential oil!)

    Instructions

    Shortcake Biscuits

    1. Preheat your oven to 425*.
    2. In a large bowl, combine flour, sugar, baking powder and salt.
    3. Use a pastry cutter or two forks to cut in the butter until your mixture resembles coarse crumbs.
    4. In a small bowl, combine the beaten egg and the evaporated milk.
    5. Add the wet mixture all at once to your bowl of dry ingredients and stir just enough to moisten.
    6. If you want to make individual biscuits, spoon the batter onto your lightly sprayed baking sheet. (You should get about 10 biscuits.)
    7. If you want one large biscuit (like the one pictured), spread the batter into a 8 inch or 9 inch baking pan sprayed lightly with baking spray.
    8. Bake just until lightly browned and if you bake one large biscuit, use a toothpick to test for doneness.

    Peach Topping

    1. Simmer all ingredients in a sauce pan, stirring occasionally until thickened.
    2. Just before serving, place large biscuit on a serving tray or cake stand (or split individual biscuits in a bowl) and top with peach topping. Finish with a dollop of whipped cream or vanilla ice cream and sprinkle with cinnamon.

    Honestly, the shortcake biscuits are so easy - no yeast, no rising, no punching down, no rolling out, no floured surface - just rustic, fluffy drop biscuits.  If you like your biscuits a little sweeter, add an additional tablespoon of granulated sugar.  They are at their most delicious when they are piping hot, split open and topped with tons of juicy strawberries, blueberries or peaches!

    Or, made into one giant biscuit to slice into wedges and serve pie-style ...

    How do you shortcake?  Are you a "less fruit and more biscuit" kinda guy or gal?  Personally, I need fruit and juice for every.single.bite of biscuit.  I like my shortcake drenched with fruity goodness!  And topped with lots of whipped cream!  {Or better yet, a scoop of vanilla ice cream!}  Ah, that one perfect bite ...

      Oh yum, it looks so good, practically salivating. I love shortcake of any kind. Will have to make the short cake biscuit. Can remember cutting peaches years ago for kids for shortcake.
