You know we’re funfetti fans here, like my funfetti cookie bars and funfetti cupcakes so of course it would be silly of me not to share this fun and easy 4 ingredient funfetti cake mix cookie recipe!

These cookies can be made start to finish in just 15 minutes. They also only need 3 ingredients so they are easy enough for the kids to make too!

Ingredients

  • funfetti cake mix
  • vegetable oil
  • eggs

Do you need to add sprinkles to funfetti cookies?

There is no need to add sprinkles to these cake mix cookies but they are super colorful and pretty if you do.

Some sprinkles tend to bleed when you bake them, I have had no issue with this using Wilton brand sprinkles.

Step by step

  1. Preheat your oven before you start anything, this is probably the longest step in the process!
  2. Line a baking sheet with parchment paper or a silicone mat.
  3. Gather your ingredients.
  4. Mix ingredients until blended.
  5. Roll into 1.5 inch balls and place on a baking sheet. Press lightly to slightly flatten the cookie.
  6. If you are adding sprinkles to the top, place them on a small plate and press the cookie into them.
  7. Bake for 8 minutes or until golden.
  8. Try not to eat the entire batch!!

Freezing instructions

These cookies freeze up easily, so you can make a big batch and save some for later!

  1. Let the cookies cool completely after baking, then freeze on a baking sheet for 30 minutes.
  2. Once the cookies are hard to touch, add to a freezer bag or freezer-safe container and store up to 3 months.
  3. To thaw the cookies, remove from freezer and let them sit at room temperature for 2 hours before serving.

Ingredients

Scale
  • 17 oz box Funfetti Cake Mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • sprinkles for decoration (optional)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper or spray lightly with nonstick spray.
  3. Mix cake mix, eggs, and oil in a medium bowl until blended. Dough will be very thick.
  4. Roll dough into 1-1/5″ balls then flatten slightly.
  5. Empty sprinkles into a shallow dish and press cookie into the sprinkles to coat the top.
  6. Place on the prepared pan, keep cookies 2″ apart.
  7. Bake 8 minutes or until set and golden.
  8. Enjoy warm or store in an airtight container at room temperature up to one week.

Notes

To freeze the cookies, let the cookies cool completely after baking, then freeze on a baking sheet for 30 minutes.   1. I saw that you mentioned that the cookie dough needs to be rolled out into 1 to 1-1/5-inch balls. Can I use an ice cream scoop, to help me measure the balls, when I form the dough?
