    I talked about my love of eggnog every year this time.  Since I had a little eggnog leftover, I figured I would whip up a new variation of my favorite oatmeal no-bake cookies.  And these babies taste just like Christmas to me!  Tons of eggnog and nutmeg flavor in bite-sized no-bake cookies!

    This makes a good-sized batch - about 45-50 cookies depending on the size you make them - and it is easy to double the recipe.  And that means they are practically perfect for a cookie exchange or adding to your cookie trays this year!

    Description

    No Bake Eggnog Cookies are so easy to stir together and just taste like the holidays! These are a great addition to your cookie plates!


    Ingredients

    Scale
    • 1 cup granulated sugar
    • 1 cup light brown sugar
    • ¾ cup unsalted butter
    • ⅔ cup eggnog
    • ¼ teaspoon ground nutmeg
    • 1 small box (3.4 oz vanilla instant pudding)
    • ½ teaspoon vanilla extract
    • 3 ½ cups quick cook oats

    Instructions

    1. In a large pot, bring sugars, butter, nutmeg and eggnog to a boil.
    2. Allow to boil for 2 minutes, stirring constantly.
    3. Remove the pot from the heat and stir in pudding mix until thoroughly combined.
    4. Stir in vanilla extract and oats.
    5. Allow mixture to set for about 5 minutes.
    6. Spoon cookies onto a parchment lined tray and allow cookies to set.
