Fiesta Bruschetta – A Cinco de Mayo Twist on a Classic Appetizer!

I’ve shared our “football food” tradition with you before. Sometimes on game day, we’ll make a big spread of appetizers and just munch in lieu of dinner. So, we are pretty serious about our dips and nibbles and small bites.

This easy twist on bruschetta – loaded up with our favorite fresh salsa – definitely made the grade and got thumbs up all around from my football fan fam! And it’s perfect to share with you since Cinco de Mayo is just days away!

Why I love this recipe

I love having quick and easy appetizers in my entertaining arsenal and this twist on classic bruschetta is one of them.

Whether I need some munchies for a pool party, a light bite for a girls day or just something easy and delicious for a Cinco de Mayo celebration, I just grab a few ingredients from my local grocery store and whip up a pan (or two) of this Fiesta Bruschetta!

Ingredients

  • fresh baguette
  • fresh salsa or pico de gallo (homemade or store bought)
  • taco seasoning
  • shredded Mexican cheese

Step by step

If you can slice, stir and scoop, then you can make this! 

  1. First, slice a French baguette. I picked one up from our grocery store bakery.
  2. Then, stir together the taco seasoning and shredded cheese. I like finely shredded cheese for this recipe because the taco seasoning seemed to stick to it better. But use what you have in your fridge – it will be delicious either way!
  3. Scoop the seasoned cheese on your baguette slices and let the oven make it all melty and toasted.
  4. Then, scoop fresh salsa (as hot as you like it) on top of each cheesy bruschetta slice. Our local grocery store has a great fresh salsa so that is my go-to but feel free to make your favorite homemade salsa recipe to use to top these toasty slices of cheese covered bread.

    Like this … mmmmmmm.

    That’s it … all that is left it to serve and dig in! You can garnish the Fiesta Bruschetta with a little fresh cilantro, jalapeño slices, or tomatillo salsa, but just like my breakfast nachos, I like my bruschetta tame.

    Storage

    This recipe is best served freshly made so the bread doesn’t get soggy. You can mix the topping ingredients ahead of time and store in the refrigerator until ready to bake.

    Description

    Fiesta bruschetta is a fun Mexican twist on a classic appetizer recipe! This easy recipe is perfect for parties, especially Cinco de Mayo!


    Ingredients

    Scale
    • One loaf French baguette
    • 1 cup finely shredded cheddar cheese
    • 12 tablespoons taco seasoning (to taste)
    • Your favorite fresh salsa

    Instructions

    1. Preheat oven to 375 degrees F.
    2. Line a baking sheet with a sheet of parchment paper for easy clean up.
    3. Slice the baguette into 1 inch slices and arrange on a baking sheet.
    4. Mix the shredded cheese and taco seasoning together in a bowl.
    5. Divide cheese between baguette slices.
    6. Place baking sheet into the oven until the bread is toasted and the cheese has melted.
    7. Top each baguette slice with a teaspoon of fresh salsa.
    8. Enjoy!
