Baked Chicken Breast Stuffed with Cheesy Spinach

Baked chicken stuffed with a cheesy bacon spinach combination is about to be your new favorite meal for busy weeknights. This easy recipe takes a few simple ingredients, just 10 minutes to prep and 30 minutes in the oven.

One of the emails I get most often is a request for a new chicken breast recipe and let me tell you, today’s is a winner. Juicy chicken breasts are stuffed with a mouth-watering mixture of cream cheese, bacon, parmesan cheese, and fresh spinach and baked to perfection. The entire family will love this tasty dish and it is also low carb and keto friendly.

Ingredients

  • boneless, skinless chicken breasts
  • olive oil
  • spices – garlic powder, onion powder, paprika, garlic, salt and black pepper
  • fresh baby spinach
  • butter
  • cream cheese
  • bacon (cooked and crumbled)
  • parmesan cheese

Step by step

  1. Preheat the oven to 375 degrees and spray a baking dish with nonstick spray. Set aside.
  2. In a small bowl mix the garlic powder, onion powder, and paprika. Season the chicken breasts with the spice mixture on all sides.
  3. Heat olive oil in a large skillet over medium high heat. 
  4. Sear the chicken 1-2 minutes on each side. Set aside.
  5. In the same skillet reduce heat to medium and add butter. Stir in garlic and sauté for 30 seconds. Add spinach and cook for 1-2 minutes until slightly wilted, stirring often.
  1. Add cream cheese, bacon, parmesan, and salt and pepper and continue to cook until cream cheese is melted and mixture is combined. Remove from heat.
  2. Use a sharp knife to slice a pocket into the side of each chicken breast. Carefully use a spoon to stuff each chicken breast with the cream cheese mixture and place chicken into the prepared baking dish.
  3. Bake for 25 minutes or until chicken is cooked through and the internal temperature of the chicken reads 165 ºF with a meat thermometer in the thickest part.

Variations

This is a great base recipe that you can change up for variety or to suit was you have on hand.

  • use mozzarella cheese or feta cheese instead of parmesan
  • use Italian seasoning instead of my spice blend on the outside of the chicken breasts
  • spice it up with red pepper flakes

Serving suggestions

While this cheesy spinach chicken bake is hearty enough to serve as a complete meal in itself, you can also serve it with pasta, roasted potatoes, or rice. To keep it low carb you can serve with zucchini noodles or cauliflower rice.

Storage

Store in the refrigerator in an airtight container up to 3 days.

Reheat in the oven at 350 until heated through or in the microwave.

Freeze in a freezer-safe container up to 3 months. Thaw overnight in the refrigerator before reheating.
