Description
Baked chicken stuffed with a cheesy bacon spinach combination is about to be your new favorite meal for busy weeknights. This easy recipe takes a few simple ingredients, just 10 minutes to prep and 30 minutes in the oven.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 4 tablespoon butter
- 4 teaspoons minced garlic
- 6 cups fresh baby spinach
- 6 ounces cream cheese, cut into cubes
- 1/2 cup bacon, cooked and crumbled
- 1/2 cup Parmesan cheese, grated
Instructions
- Preheat the oven to 375 degrees and spray a baking dish with nonstick spray. Set aside.
- In a small bowl mix the garlic powder, onion powder, and paprika. Season the chicken breasts with the spice mixture on all sides.
- Heat olive oil in a large skillet over medium high heat.
- Sear the chicken 1-2 minutes on each side. Set aside.
- In the same skillet reduce heat to medium and add butter. Stir in garlic and sauté for 30 seconds. Add spinach and cook for 1-2 minutes until slightly wilted, stirring often.
- Add cream cheese, bacon, parmesan, and salt and pepper and continue to cook until cream cheese is melted and mixture is combined. Remove from heat.
- Use a sharp knife to slice a pocket into the side of each chicken breast. Carefully use a spoon to stuff each chicken breast with the cream cheese mixture and place chicken into the prepared baking dish.
- Bake for 25 minutes or until chicken is cooked through and the internal temperature of the chicken reads 165 ºF with a meat thermometer in the thickest part.
Notes
Store in the refrigerator in an airtight container up to 3 days.
Reheat in the oven at 350 until heated through or in the microwave.
Freeze in a freezer-safe container up to 3 months. Thaw overnight in the refrigerator before reheating.
