Baked Chicken Breast Stuffed with Cheesy Spinach

Description

Baked chicken stuffed with a cheesy bacon spinach combination is about to be your new favorite meal for busy weeknights. This easy recipe takes a few simple ingredients, just 10 minutes to prep and 30 minutes in the oven.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 4 tablespoon butter
  • 4 teaspoons minced garlic
  • 6 cups fresh baby spinach
  • 6 ounces cream cheese, cut into cubes
  • 1/2 cup bacon, cooked and crumbled
  • 1/2 cup Parmesan cheese, grated


Instructions

  1. Preheat the oven to 375 degrees and spray a baking dish with nonstick spray. Set aside.
  2. In a small bowl mix the garlic powder, onion powder, and paprika. Season the chicken breasts with the spice mixture on all sides.
  3. Heat olive oil in a large skillet over medium high heat.
  4. Sear the chicken 1-2 minutes on each side. Set aside.
  5. In the same skillet reduce heat to medium and add butter. Stir in garlic and sauté for 30 seconds. Add spinach and cook for 1-2 minutes until slightly wilted, stirring often.
  6. Add cream cheese, bacon, parmesan, and salt and pepper and continue to cook until cream cheese is melted and mixture is combined. Remove from heat.
  7. Use a sharp knife to slice a pocket into the side of each chicken breast. Carefully use a spoon to stuff each chicken breast with the cream cheese mixture and place chicken into the prepared baking dish.
  8. Bake for 25 minutes or until chicken is cooked through and the internal temperature of the chicken reads 165 ºF with a meat thermometer in the thickest part.

 

Notes

Store in the refrigerator in an airtight container up to 3 days.

Reheat in the oven at 350 until heated through or in the microwave.

Freeze in a freezer-safe container up to 3 months. Thaw overnight in the refrigerator before reheating.
