Why yes, this is another no bake cookie recipe.  And this may just be my favorite so far!

I guess I did say that about the pumpkin spice no bake cookies.

And I probably said it again after I made the banana bread no bake cookies.

Oh.  Those birthday cake no bake cookies were pretty rock star, too.

But let’s just give the new kids on the block a chance to be in the spotlight today!  Put your hands together for the perfect no bake cookie for Fall …

Oatmeal Scotchies No Bake Cookies

Classic oatmeal scotchies get an easy no bake makeover! If you love butterscotch, you will LOVE these cookies!



Oatmeal scotchies – the baked oatmeal cookies with butterscotch chips – are one of my mom’s specialties!  {I am also sharing her knock out pumpkin cookies soon, too!} My mom’s oatmeal scotchies always turn out perfect.  They are dense and chewy with that little crispy edge. They are absolutely divine!  Sadly, I have yet to master baked oatmeal scotchies.  Oh, but I’ve got the no bake version locked down!

Oatmeal Scotchies No Bake Cookies

Description

The classic taste of oatmeal + butterscotch of oatmeal scotchies gets an easy no bake makeover! Oatmeal scotchies no bake cookies are made stovetop in less than 10 minutes!


Ingredients

Scale
  • 1 cup light brown sugar (packed)
  • 1 cup granulated sugar
  • 3/4 cup butter
  • 2/3 cup milk
  • 1 small box (3.4 oz butterscotch instant pudding and pie filling)
  • 1/2 teaspoon vanilla extract
  • 3 1/2 cups quick cook oats
  • 1 cup butterscotch chips

Instructions

  1. In a large pot, bring sugars, butter and milk to a boil.
  2. Allow to boil for 2 minutes, stirring constantly.
  3. Remove the pot from the heat and stir in vanilla extract.
  4. Stir in pudding mix and oats.
  5. Allow mixture to cool slightly for about 2 minutes then stir in butterscotch chips.
  6. Spoon cookies onto a parchment lined tray and allow cookies to set.

Notes

I used almond milk in place of regular milk, so feel free to substitute it if you would like. I use my small Pampered Chef cookie scoop to scoop out the cookies, so you may get more or less cookies depending on the size you make them.

These sweet little oat-y bites have BIG butterscotch flavor!  Who knew a little ol’ no bake cookies could back such a big flavor punch? Oatmeal and butterscotch is such a great classic flavor combination for Fall and these cookies have it in spades!  They travel well and can serve a crowd, so pack them up for your next pot luck or party.  Any leftovers {what leftovers?!} can be stored in an air tight container.

No need to heat up your oven - these Oatmeal Scotchies No Bake Cookies are done is less than 10 minutes!
