I’ve made a lot of desserts, but buckeyes hold a special place in my heart. They’re simple, they’re delicious, and they always make people happy. I love that I can whip up a batch without spending hours in the kitchen or buying a bunch of fancy ingredients.

The process is really relaxing, too. There’s something nice about rolling each ball between your hands and then carefully dipping it in melted chocolate, leaving that little circle of peanut butter on top. That’s what makes them buckeyes, they look just like the nuts from Ohio’s state tree.

These are perfect for cookie exchanges, holiday parties, homemade gifts, or sometimes just because I’m craving that perfect combination of peanut butter and chocolate, just like my chocolate peanut butter fudge.

Ingredients

  • peanut butter – use traditional, not natural peanut butter for this recipe

  • vanilla extract
  • powdered sugar
  • dark chocolate candy melts

Step by step

  1. Line two baking sheets with parchment paper and set them aside.
  2. In a stand mixer or large mixing bowl, beat the peanut butter, softened butter, and vanilla extract until the mixture is smooth and creamy.
  3. Gradually add the powdered sugar, mixing on low speed until fully incorporated. If the mixture feels too soft, mix in up to an additional ½ cup of powdered sugar to help it firm up. The mixture should still be soft but easy to roll.
  1. Scoop out portions using a tablespoon and roll each one into a smooth ball between your palms. Arrange the balls on the prepared baking sheets.
  2. Chill the peanut butter balls in the refrigerator for 2 hours or place them in the freezer for 30 minutes, or until firm.
  3. Once the balls are firm, melt the candy melts in a double boiler on the stovetop or in the microwave following the instructions on the package.
  4. Remove the chilled peanut butter balls from the refrigerator or freezer. Insert a skewer into the top of each ball, then dip it into the melted chocolate, leaving a small portion of peanut butter visible on top.
  1. Transfer each dipped ball back onto the prepared baking sheet. Continue dipping the remaining balls, then refrigerate or freeze them again until the chocolate coating is fully set.

Tips for Best Results

  • Soften the butter properly. At room temperature, butter blends more easily with the peanut butter, creating a smooth mixture.
  • Do not skip the chilling time because firm peanut butter balls make dipping easier and help keep them from slipping off the skewer.
  • Work quickly when dipping. The warmth from your hands can soften the balls, so move fast and keep the undipped balls in the refrigerator.
  • Use a toothpick or a skewer. This gives you better control when dipping and helps you create that classic buckeye look. Use your finger to pat the holes left by the skewer after dipping.
  • Let the excess chocolate drip off. Gently tap the skewer on the side of the bowl to remove any extra chocolate before you place buckeyes on the sheet.

Storage

Keep finished buckeyes in an airtight container in the refrigerator for up to 3 weeks. To prevent them from sticking together, layer them between sheets of parchment or wax paper.

If you want to keep them longer, they freeze beautifully for up to 3 months. Just place them in a freezer-safe container or bag and thaw in the fridge when you’re ready to enjoy them.
