Description

This Easy Buckeye Recipe makes creamy peanut butter balls dipped in smooth, melted chocolate, leaving a small circle on top to mimic a buckeye nut. They chill quickly, set beautifully, and always taste rich and delicious, perfect for holiday parties.

Ingredients

Scale
  • 1 ½ cups creamy peanut butter
  • ¾ cup (1 ½ sticks) butter, softened to room temperature
  • 1 teaspoon vanilla extract
  • 3 cups powdered sugar, more as needed
  • 10 oz dark chocolate candy melts

Instructions

  1. Line two baking sheets with parchment paper and set them aside.
  2. In a large mixing bowl, beat the peanut butter, softened butter, and vanilla extract until the mixture is smooth and creamy.
  3. Gradually add the powdered sugar, mixing on low speed until fully incorporated. If the mixture feels too soft, mix in up to an additional ½ cup of powdered sugar to help it firm up. The mixture should still be soft but easy to roll.
  4. Scoop out portions using a tablespoon and roll each one into a smooth ball between your palms. Arrange the balls on the prepared baking sheets.
  5. Chill the peanut butter balls in the refrigerator for 2 hours or place them in the freezer for 30 minutes, or until firm.
  6. Once the balls are firm, melt the candy melts following the instructions on the package.
  7. Remove the chilled balls from the refrigerator or freezer. Insert a skewer into the top of each ball, then dip it into the melted chocolate, leaving a small portion of peanut butter visible on top.
  8. Transfer each dipped ball back onto the prepared baking sheet. Continue dipping the remaining balls, then refrigerate or freeze them again until the chocolate coating is fully set.
