Description
This Easy Buckeye Recipe makes creamy peanut butter balls dipped in smooth, melted chocolate, leaving a small circle on top to mimic a buckeye nut. They chill quickly, set beautifully, and always taste rich and delicious, perfect for holiday parties.

- 1 ½ cups creamy peanut butter
- ¾ cup (1 ½ sticks) butter, softened to room temperature
- 1 teaspoon vanilla extract
- 3 cups powdered sugar, more as needed
- 10 oz dark chocolate candy melts
Instructions
- Line two baking sheets with parchment paper and set them aside.
- In a large mixing bowl, beat the peanut butter, softened butter, and vanilla extract until the mixture is smooth and creamy.
- Gradually add the powdered sugar, mixing on low speed until fully incorporated. If the mixture feels too soft, mix in up to an additional ½ cup of powdered sugar to help it firm up. The mixture should still be soft but easy to roll.
- Scoop out portions using a tablespoon and roll each one into a smooth ball between your palms. Arrange the balls on the prepared baking sheets.
- Chill the peanut butter balls in the refrigerator for 2 hours or place them in the freezer for 30 minutes, or until firm.
- Once the balls are firm, melt the candy melts following the instructions on the package.
- Remove the chilled balls from the refrigerator or freezer. Insert a skewer into the top of each ball, then dip it into the melted chocolate, leaving a small portion of peanut butter visible on top.
- Transfer each dipped ball back onto the prepared baking sheet. Continue dipping the remaining balls, then refrigerate or freeze them again until the chocolate coating is fully set.
