Have you ever had one of those days when something works out exactly how you expected?  That is the best, right?!  Now, I have had my fair share of recipe fails in the Shaken Together kitchen.  This recipe is not one of them!  Banana bread no bake cookies are little bites of banana bread heaven!

Think about a warm loaf of banana bread fresh from the oven … brimming with bananas, a touch of cinnamon and a healthy sprinkling of crunchy walnuts …

Now, forget all about all that work and turn off your oven!  Why bake when you can no bake?!

Banana bread no bake cookies that taste JUST like banana bread!!

These are a riff on traditional no-bake cookies – you know, the ones with oats, peanut butter and chocolate?  Those are a Christmas cookie tray staple in our house.  My mom and I have made them for years and now, I make them with my boys.  Don’t tell them {the cookies, that is}, but they just may have a little competition for real estate on that cookie tray now!

You see, when I was brainstorming this recipe, I figured that these cookies might taste like banana bread.  I mean banana pudding + walnuts should sort of taste like our favorite breakfast bread.  But there is no might or should about it!  These banana bread no bake cookies taste just like banana bread!

Banana Bread No Bake Cookies

Description

These banana bread no bake cookies are so easy and taste just like banana bread!


Ingredients

Scale
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 3/4 cup butter
  • 2/3 cup milk
  • Dash cinnamon (about 1/3 teaspoon)
  • 1 small box (3.4 oz banana cream instant pudding mix)
  • 1/2 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 3 1/2 cups quick cook oats

Instructions

  1. In a large pot, bring sugars, butter, cinnamon and milk to a boil.
  2. Allow to boil for 2 minutes, stirring constantly.
  3. Remove the pot from the heat and stir in pudding mix until thoroughly combined.
  4. Stir in vanilla extract, walnuts and oats.
  5. Allow mixture to set for about 5 minutes.
  6. Spoon cookies onto a parchment lined tray and allow cookies to set.

Notes

I used almond milk in place of regular milk, so feel free to substitute it if you would like. I use my small Pampered Chef cookie scoop to scoop out the cookies, so you may get more or less cookies depending on the size you make them.

Basically, these are a stir and scoop cookie.  One pot, one spoon and a few measuring cups – that’s really all you need to make banana bread no bake cookies!

I let them set up in the fridge (because Florida is the humidity capital of the world and everything takes forever to set up) and I then I store any leftovers in the fridge.  I don’t know that you have to, but they are actually really really good chilled.  With a glass of milk.  And some stretchy pants.

I had to hide the container of these cookies WAY in the back of the fridge, barricaded with jars of pickles and packages of juice boxes and behind our snack basket.  I pretty much had to make a cookie obstacle course to stop from eating these one right after another after another.  {Please tell me I am not the only one with slightly less than perfect will power?!}

Anyway.  Make them.  No bake them. Share them with friends.  Banana bread no bake cookies will rock your socks off!

    1. You don’t have to add any additional oats – the walnuts were just an add in to the basic recipe. Feel free to replace the walnuts with chopped banana chips or even white chocolate chips if you want to 🙂

  4. This recipe sounds great, as my oven is out of commission, but I can still use the stovetop. Question: Do you think I could use mashed bananas in place of banana pudding? I try to avoid processed foods with questionable ingredients and extra sugar. I’ll be trying coconut sugar and stevia as my sugars. Thank you!

  5. How long does it take for these to set up? I made them tonight and they are still really soft….are they supposed to be that way or should they be about the same consistency as the chocolate no bakes?

  6. Really good! I cut the sugars in half and it was perfect. Everything set up. I will add mini chocolate chips next time.

  7. They taste great! I did have a problem with them setting though, they never got firm. Any hints on how to fix that would be great!






    1. Hi Jeanne – sometimes the humidity affects these cookies from setting. Try popping them in the fridge to set or reducing the liquid 🙂
