Description

My Banana Bread No Bake Cookies are chewy, nutty, and bursting with banana flavor. With a touch of cinnamon and no baking required, they are perfect for busy days!


Ingredients

Scale
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 3/4 cup butter
  • 2/3 cup milk
  • 1/3 teaspoon cinnamon
  • 1 small box or 3.4 oz banana cream instant pudding mix
  • 1/2 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 3 1/2 cups quick cook oats


Instructions

  1. In a large pot, combine the sugars, butter, cinnamon, and milk.
  2. Bring the mixture to a boil over medium heat, stirring constantly to prevent it from burning. Allow the mixture to boil for 2 minutes, continuing to stir.
  3. Remove from heat and stir in the pudding mix until fully combined.
  4. Stir in the vanilla extract, walnuts, and oats until everything is well-mixed. Allow the mixture to cool for about 5 minutes.
  5. Spoon the mixture onto a parchment-lined tray, shaping it into cookies. Allow the cookies to set completely. Serve and enjoy!

Notes

  • I used almond milk instead of regular milk, so feel free to substitute it if you’d like. I use my small Pampered Chef cookie scoop to scoop out the cookies, so you may get more or fewer cookies depending on the size you make them.
