I was recently gifted a waffle iron and have been on a roll using it! I first made cinnamon roll waffles which were a huge hit but to change things up I decided to make these savory Cornbread Waffles for dinner recently.

Ingredients

  • Jiffy cornbread mix (see note below if you don’t have any)
  • milk
  • egg

Step by step

There is not much to this recipe honestly, and once you make it a few times you’ll know it by heart.

  1. Stir together your cornbread mix, egg, and milk in a large bowl.
  2. Preheat your waffle iron and spray with nonstick spray. Pour the batter into the hot waffle maker, using about 1/3 cup of batter per waffle for a standard size waffle maker. Cook until it stops steaming and the waffle is golden brown and pulls away easily.

That’s it! Dinner is served!

Serving suggestions

You can serve these waffles topped SO many ways!

  • chili
  • pulled pork and barbecue sauce
  • shredded cheddar cheese and sliced green onion
  • fried chicken
  • melted butter and maple syrup or honey
  • taco style 🌮 : sour cream, corn avocado salsa, chopped cilantro, and diced tomatoes!
  • crumbled bacon and diced jalapeños

No Jiffy corn muffin mix?

Make your own corn muffin mix by combining 2/3 cup all-purpose flour, 1/2 cup yellow cornmeal, 1/3 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon of salt. Whisk it together well then add 2 tablespoons of vegetable oil to the dry ingredients and whisk again to distribute it evenly. Then move forward with the recipe as written. (recipe from Food.com)

  18. My boyfriend made these last night with his sloppy joe chili recipe…. wow! And it was so easy. The waffles have that golden brown crispy outside and moist cornbread texture throughout and were hearty enough to compliment his meaty chunky chili recipe without becoming a sloppy mess. And they look great on a plate. Can’t wait to serve our friends and family this dish next rainy day brunch or Sunday afternoon game and graze session. We went nuts for em!
