Cornbread Waffles

Description

Cornbread waffles are a breakfast staple. Made with just a few basic pantry ingredients in just a few minutes, these tasty waffles are perfect for busy family weeknight dinners!


Ingredients

1 package Jiffy corn muffin mix
1 egg
3/4 cup milk
 


Instructions

  1. Stir together all ingredients in a large bowl.
  2. Preheat waffle iron and spray with nonstick spray.
  3. Pour batter onto the waffle maker using about 1/3 cup of batter for a standard size.
  4. Cook until it stops steaming and waffle is golden brown and pulls away easily.

Notes

Make your own corn muffin mix by combining 2/3 cup all-purpose flour, 1/2 cup yellow cornmeal, 1/3 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon of salt. Whisk it together well then add 2 tablespoons of vegetable oil to the dry ingredients and whisk again to distribute it evenly. Then move forward with the recipe as written. (recipe from Food.com)
