I love a good comfort food meal made in the slow cooker. There’s nothing better than coming home to dinner ready to be served, especially on busy weeknights.

This easy recipe is one of my favorites. Ground beef, tomato sauce, and seasonings are added to the slow cooker to simmer all day, then egg noodles are added along with a generous helping of cheese to top it off. This is one of those meals that has even picky eaters asking for seconds!

Why I love this recipe

  • 15 minutes prep, you can even brown the meat the evening before and just dump it in the slow cooker in the morning
  • so much flavor!
  • it is a warm, comforting, hearty meal
  • leftovers reheat well so you can enjoy it the next day as well

Ingredients

You only need a few simple ingredients for this easy recipe.

ground beef and noodles ingredients on countertop
  • ground beef
  • onion soup mix
  • onion
  • garlic
  • salt and pepper
  • Italian seasoning
  • tomato sauce
  • beef broth
  • noodles
  • cheese

Step by step

  1. Add raw ground beef to a skillet and brown over medium-high heat, breaking it apart as it cooks. Drain excess grease and add the meat to the slow cooker.
  2. Add all ingredients except the cheese and egg noodles. Stir to mix.
  3. Cook on low for 6 hours or high for 3 hours.
  4. Add egg noodles to the beef mixture and cook for an additional 30 minutes on low or 15 minutes on high.
  5. Top with cheddar and allow to melt a few minutes before serving.

Variations

This is a really versatile recipe you can change up depending on what you have on hand. Here are a few ideas:

  • use ground turkey, ground pork, or ground chicken instead of ground beef
  • stir in a little bit of sour cream, cream cheese, or heavy cream to make a creamier version of the sauce
  • substitute a different type of noodles
  • add a little extra flavor by adding in Worcestershire sauce, a brown gravy packet, or cream of mushroom soup
  • top with parmesan cheese or mozzarella cheese instead of cheddar cheese or omit the cheese altogether
