Cheeseburger Eggrolls are a perfect blend of flavors with ground beef and crispy bacon, melty cheese, and a kick of seasoning, all wrapped up in crunchy eggroll wrappers.

Why I love this recipe

  • combines two of my favorite foods into one
  • perfect for any occasion, from casual get-togethers to family dinners
  • easy to customize with your favorite cheeseburger toppings
  • great for meal prepping and reheating later just like our traditional egg roll recipe

Ingredients

  • ground beef
  • bacon slices
  • sweet onion
  • cheese
  • garlic cloves
  • spices: all-purpose seasoning, chili powder, garlic powder, paprika, onion powder, kosher salt, white pepper
  • ketchup and BBQ sauce, optional
  • vegetable oil for frying
  • eggroll wrappers

Step by step

  1. Heat the skillet over medium-high heat. Once hot, add the bacon and cook on both sides for about 3 minutes (or until desired crispiness). Remove and let it drain on a paper towel-lined plate.
  2. Add diced onion to the bacon grease. Sauté until the onions are translucent, about 3-4 minutes. Add garlic and cook 30 seconds, constantly stirring so the garlic doesn’t burn. Remove from the pan and set aside.
  3. Add in the ground meat and cook until browned. Then, drain meat and return to the skillet.
  4. Add in the onions and garlic, plus all of the dry seasonings. Stir to incorporate.
  5. Remove from heat and add in ketchup and bbq sauce if desired.

  1. Chop up the bacon and shred the cheese.
  2. Transfer meat mixture to a bowl. Clean the frying pan, fill halfway with vegetable oil, and begin to preheat it on medium heat.
  3. Prepare the area for rolling the egg rolls. Place meat filling diagonally on wrap. Add cheese and bacon crumbles.
  4. Fold the bottom corner over the filling. Roll snuggly halfway to cover filling and fold in both sides snuggly against filling. Use water to moisten the edges of the flap. Roll wrapper up and seal top corner and lay flat side down until ready to cook.
  5. Once the eggrolls are all rolled, the oil should be hot enough. Fry on each side for 2-3 mins. As soon as the edges are golden brown, flip them over. Drain on paper towel-lined plate.
  6. Serve with dipping sauces and enjoy!

Tips for Best Results

  • Be careful not to overfill the eggrolls to prevent them from bursting during frying.
  • Make sure the edges are sealed tightly with water to avoid leaks.
  • Ensure the oil is hot enough before frying to get that perfect crispy texture.
  • Let the eggrolls drain on a paper towel to remove excess oil.

Variations

Play around with different cheeses like blue cheese, pepper jack, or mozzarella.

For added heat, add chopped jalapeño or a sprinkle of red pepper flakes.

You could also make these eggrolls as a creative way to use up leftover taco meat, just omit the spices in the recipe if the taco meat is already seasoned.

Serving suggestions

Cheeseburger Eggrolls are versatile and can be served in various ways. I love serving them up with ketchup, BBQ sauce, or ranch dressing for dipping.

Storage

Store leftover egg rolls in an airtight container in the refrigerator for up to three days.

To reheat, preheat your oven to 350°F and bake the eggrolls for about 10 minutes or until heated through. This will help maintain their crispy texture.
