Ingredients
You only need a few basic baking ingredients for these tasty bars. The only special ingredient is the cream of tartar, which gives the classic snickerdoodle texture and tangy flavor.
For best results allow the eggs and butter to come to room temperature before mixing.

Step by step
- Set your oven to 350°F. Grease a 9×13-inch baking pan or line it with parchment paper, leaving some extra paper hanging over the edges for easy lifting later.
- In a large bowl, beat the softened butter and granulated sugar together until the mixture is fluffy and smooth. Add the eggs one by one, mixing well after each addition, then stir in the vanilla extract until fully blended.

- In a separate bowl, whisk the flour, cream of tartar, and baking soda until everything is evenly mixed. Gradually add the dry ingredients to the butter mixture, stirring just until the dough comes together.
- Spread the prepared dough into the baking pan.
- Bake in the preheated oven for 20–25 minutes, or until the edges turn golden and a toothpick inserted into the center comes out clean.
- Mix the brown sugar and cinnamon in a small bowl, then sprinkle it evenly over the baked bars. Let the bars cool completely before cutting them into squares.

Tips for Best Results
- Don’t overmix the dough; it keeps the bars soft.
- Line your pan with parchment for easy removal.

Variations
If you want something different, mix in chocolate chips or white chocolate chunks for an extra layer of sweetness.
You could also fold in some chopped pecans or walnuts for a nutty kick. For a festive option, trade the cinnamon for pumpkin pie spice and savor the taste of fall.
Serving suggestions
For an extra touch, dust with powdered sugar or top with vanilla ice cream and caramel sauce.

Storage
Once cooled, store Snickerdoodle Bars in an airtight container at room temperature for up to three days.
For longer storage, pop them in the fridge or freeze them in a freezer bag, separating the layers with parchment paper. Let them thaw to room temperature before enjoying.
