Cool and creamy, sweet but not overly so, full of pineapple and coconut ... this Hawaiian rice pudding tastes like a vacation! And I don't know about you, but with single digit days left in our school year, vacation sounds like a pretty fantastic idea! We are still planning the when and where for our Summer vacation this year {it depends on how well Cam's All Star baseball team does}, so this tasty little no bake treat will have to tide us over until we pull into a little beachside cottage somewhere!
Hawaiian Rice Pudding {aka Rice Hawaiian}

Here are just a few of my favorite recipes passed down from Grandma Doll: strawberry shortcake {her biscuits are amazing!}, creamy cucumber salad, broccoli cheese soup, brats & sauerkraut and mini pecan pie muffins.
Okay, back to her Hawaiian Rice Pudding!

Ingredients
- 2 cups cooked rice (warm)
- ½ cup brown sugar
- One 8 oz.can crushed pineapple with juice
- ⅓ cup shredded coconut
- 8 oz. whipped topping (thawed)
Instructions
- In a large bowl, stir together warm rice and brown sugar.
- Once the brown sugar has melted, add the crushed pineapple with the juice and stir until combined.
- Chill the pineapple rice mixture.
- Just before serving, fold in the coconut and whipped topping.
Hawaiian Rice Pudding is totally a throw back dessert - a true classic. Simple and straight forward, it only has a few ingredients. Can't you just picture it served in vintage Corningware or bright orange Tupperware at Summer potlucks and church picnics?!
I wasn't quite sure how I would like rice in a chilled dessert. BUT, it really does provide a great texture and subtle flavor. Rice holds up well in the fridge and it is inexpensive, so if you need to feed a crowd, you can easily double this recipe!
My grandma called this Rice Hawaiian. And since it is full of pineapple and coconut, that makes perfect sense. You could definitely fold in some mini marshmallows or sprinkle some toasted macadamia nuts on top if you want, too.
But I think we'll make it just like grandma did 🙂

I am serving the rice tomorrow and want to put in ice cream scoops. Would it still taste good if I add the coconut and whipped cream tonight and serve tomorrow?
Also what do you think about toasted coconut and cinnamon on top?
